I’d love to see the chocolate chip cookies! they were delicious but mine came out very thin (though they had the wrinkles for sure!) and I’d like to see your process on the chance I did something very wrong lol
We went from "Now time for my favourite part, reading the ingredients", to " Today I'm going to show you one of my favourite recipes from Dessert Person" 😂
Although I think reading the ingredients wasn't her favorite part, I think in one of her videos she didn't wanted to read the ingredients and you could hear the director telling her "Say it". But I believe these are in fact her favorite recipes since she wrote the book, so all of them are her favorites.
@@RoninBoss @RoninBoss You're right, but I think when GM first started it genuinely used to be her favorite part. Saying that, glad she is now doing things on her terms, never liked how stressed she became over the overtly caricaturistic turn of the series.
I just made it, it’s one of the softest cakes with the most delicate crumb texture I’ve ever made. Mind you,I’m French and we don’t usually cream the butter with sugars and then alternate wet and dry mixtures, so this was a nice thing to try. I would definitely advise to get the strongest brew you can get your hands on, and maybe double the quantity of ribbon or double the amount of coffee crystals you add to it so that the flavor of that sweet sweet ribbon shines through. I’m gonna leave you now, I have an entire cake to eat by myself (I told my boyfriend I took half of the cake to my colleagues, it’s not true, I ate half of the cake in a day).
I’m just assuming she didn’t proof the recipes with a fine toothed comb after the ghost writer was done translating all the random recipe cards and additions and clarifications Claire added, they tested then complied the recipes in quite a hurry it seems.
This reminds me of when I was in college and would go back to read my essays after they had been graded and was surprised by my work, thinking “dang I sound so intelligent!” 😂
I'm a "once in a blue moon" type of baker and let me say, this was so easy to follow and fun to make. I halved the recipe, which fit perfectly in a standard loaf pan. I also used a hand mixer instead. It resulted in the softest/fluffiest cake I've every had! Definitely adding this to the recipes arsenal!
The “cake you have with coffee” vs “cake that tastes like coffee” was not a cultural debate I was expecting to have, but this video saved me the hassle by making coffee cake correctly
i made this and it turned out amazing! a few notes: - i didn’t have sour cream at home so i used yogurt + a tiny bit of vinegar instead, and i didn’t notice any strange variations in texture or taste. - i halved the crumb topping because i didn’t want the cake to be too sweet, and there was just enough for it to still add to the taste and texture of the cake. - for people that don’t like the taste of coffee, the amount of coffee in this coffee cake wasn’t overpowering at all. imo the addition of instant coffee helped enhance the overall flavor. i will definitely be making this again! would highly recommend :)

I'm so glad Claire does her own thing now looking chill, instead of being stressed trying to recreate near impossible confectionery on that other channel. Her recipes here are damn awesome, easy to follow, I really need to get her recipes book. :]
She had millions of views on those videos, people love to see struggle and triumph, she had a sense of accomplishment after each video, people who think this is better for her must not handle complexity well.

It's so good to see Claire in her cozy medium-sized yet well-equiped kitchen as I've been avoiding watching anyone from Bon Appetit for a long time (being heartbroken due to their resignment). I subscribed immediately. I'm sure this channel with the one and only Claire Saffitz will grow stronger and stronger.
I made this cake two days ago and it's absolutely delicious! The batter for this cake is probably the most luscious cake batter I have ever seen. I also want to add that I was pleasantly surprised that I had all of the needed ingredients in my pantry already. Thanks so much Claire and Dessert Person producers for the awesome recipe. I will for sure make it again and I'll be trying the other recipes in the book.
Made this but halved the recipe baked in an 8-inch square pan because it's only me and my husband. Even when it was halved it needed a full 45 minutes to bake for the center to set. Baked another one because I had the idea of replacing the spices in the ribbon and crumb with cocoa powder, and replaced the coffee granules with cocoa with about 1 tablespoon extra water for the brewed coffee. I crushed the instant coffee in a mortar and pestle and mixed it with the cocoa to combine the flavors. Voila! Mocha coffee cake! I also didn't halve the ribbon ingredients and it was so good that way. If I were to make the full 13x9 inch cake I'd make it a mocha and double the ribbon.
I baked this cake the other day and it is definitely going to be my go-to coffee cake! I baked a 9x13 pan full of cake and I was blown away by how well this cake can be frozen. I cut the cake into 9" long pieces and put them in the freezer in ziplock bags. To thaw it, I just remove the pieces from the ziplock bags and cut 9" long pieces into smaller pieces, and leave them to thaw on the counter. They taste just as soft as the day I baked them.
Not me being excited to make this recipe because I had all of the ingredients, made the ribbon and crumb topping, started the batter, and realized I did not have enough flour?? What baking gal runs out of flour?! At 10:00pm and already set on baking this thang, I decided against my better judgment to half the recipe and have to say, still came out absolutely delish! (just with a lot of extra crumble but who doesn't love THAT?) Probably the only baking recipe I've halved and had it come out incredible- I can definitely contribute that to our sweet dessert person Claire Saffitz and her perfect baking guidance. For anyone who doesn’t have a mixer but really wants to try this recipe, I’ve made this by hand and it looked and tasted good to me! Just make sure you have a nice big whisk 😁 and strong arms. The cake has a lovely feathery light texture, while the crumb provides a wonderful contrasting crunch (I mixed in chopped pecans). I’m actually a lazy baker but this was so good, I made it twice in two weeks-something I have *never* done before.
I have tried this recipe, and it was the best coffee cake I've ever had! even my whole family loves it. Thank you so much claire for sharing your amazing recipe
Thanks Claire for this great recipe! I made it last night. The cake is very soft and fluffy, and full of coffee and cinnamon flavor. Soooooo good!! It’s easy enough to follow your steps and bake it at home with a hand-held mixer. It’s also super fun and relaxing to mix butter, flour and sugar with fingers, haha!!
mmm.. my mum used to always make a lovely coffee cake in a bunt pan, haven't thought about it in years, she would jus whip it up rly quick after breakfast, and we'd have it stare at us all day waiting til after dinner lol. I wonder if she remembers how to make it, she made everything from memory back then and has forgotten alot :( Note to all of you just whip it up quick bakers put there... write those recipes down somewhere once in awhile. your kids will want them.

My BFF and I have not seen each other for over a year now, but we bake together over video. She was so excited when this came out and sent a message right away that this should be our next co-baking project! We will be making in in the next week or so. I can't wait!
Claire is A-DO-RA-BLE. I love the way she handles the kitchen, she's not afraid of making mistakes and does not try to hide them. This is the integrity of character. She is also light on her mannerisms, which tells me she is fun to be with. On top of the nice personality traits, she is also an excellent professional, everything around her shows this easily. And her book is amazing! Love her!
I made this last night for valentines day for my boyfriend! One of the best things I've ever baked, it was a huge hit. For some reason my crumb topping was more of a dough so I had to break globs off and plop them on the batter, but it still tasted perfect 😊😊😊
I have made this recipe twice! it is AMAZINGLY delicious worth every dirty bowl used!!!!! My husband and children love it. I really thought the coffee amount would overpower the overall flavor of the cake but the coffee quantity is spot on! Thank you Claire Saffitz for sharing this outstanding recipe.
i made this the other night using margarine instead of butter, 3 month old finely ground coffee instead of instant and folgers coffee and it STILL turned out so yummy :')

I love that she has a smallish kitchen. I have a tiny kitchen without much counter space so baking can be a challenge. She finds a way to make her space work.
Claire, when are you going to give us a recipe that you've rated as 5 in the book? Don't think you can give us just the easy ones! Spelt Croissants next?
This was the first thing I made out of the book, it was so good! Was really hard not to eat at 10 pm when I shouldn’t be having something so full of coffee
