I make a big pot of mushroom soup and freeze it in portions to use instead of canned. It is just so much better, and it freezes for 3 months in an air tight container.
My sister sends me lots of dried porcini from Italy. They make amazing soup, or if thickened a bit more, a superb pasta sauce. (I love your recipe too.)

This looks delicious. May I add the simplest “cream of vegetable” soup recipe I have found? Bring one litre of stock to a simmer. Add your vegetable of choice, finely chopped, say in this case, brown mushrooms, let cook down until tender, then add 300ml of cream, or milk, and blend all together. Reheat a tad if needed. For a mushroom version, you could add a bit of dried thyme, you could reconstitute dried mushrooms, or you could pan fry fresh mushrooms in a bit of butter first to add more flavour. But basically, simmering stock, of your choice, finely chopped veggies, of your choice, and cream, or your substitute for cream. Takes about 10 minutes. Oh, and if you like parsnips, they taste amazing this way. Or celery, I add a bit of parmesan for cheesy goodness. Sorry, long comment. But fastest soup I have ever found to make. Works every time.
When I make mushroom soup I make like Cheryl,but I add barley to it,this makes a much more substantial soup,also some thyme in there is very good,mushrooms have an affinity with thyme,I often eat this soup without cream, as the barley cooking gives it a creamy sort of texture,sour cream is good also.Thank you Cheryl I have learned a lot from your recipes.
What a lovely soup. With cooler weather coming in, it's soup season here. This one's on the list. Sometimes I'll add dry (rehydrated) mushrooms to a cream of mushroom soup.
I love this soup. I make a similar pot of of mushroom soup, but never before with cider vinegar. I tried it and Im not going to make mushroom soup without it anymore. The only problem with this particular soup is that there never is any leftover.😊
This looks lovely! I make homemade soup every week and will add this one! Question for you. Can add the cream after I’ve blended the soup? My mother does not like cream and I thought I could put aside some for her.

I absolutely love mushrooms, hubby doesn't tho , so more for me ! I've made mushrooms soup from a tesco recipe, which is nice, but I think yours defo had the edge. No roux In that recipe, and just uses milk. But your looks super rich & thicker so defo gonna be giving this a go. I love a bowl of any soup, served over a big pile of mashed potato, delicious!!, or am I just strange!! !! Thanks for sharing Cheryl. Ooh love the finishing touch of the fried mushrooms on top 🍄
That looks heavenly. I'm sad that I'm the only person in my house who likes mushrooms. You had plain rolls with this soup! Not ham filled or cheese or square sausage! Was everyone okay? No one is I'll, right?
