AFAIK she didn't retcon Hermione to be black, she just defended that casting choice. JK Rowling made the point that she hadn't actually described Hermione's skin colour in the books, so it could be open to interpretation. This was particularly true given that she didn't write the Cursed Child, and it wasn't actually canon, but was rather a separate continuity. In any event, I don't really see the problem with changing the ethnicity of a fictional character unless it's something integral to their character and the story (e.g. Black Panther in Marvel). And in this instance, Hermione's ethnicity is completely irrelevant, since ethnicity isn't really significant at all in the original books or the Cursed Child play.
