Too much beauty in one video! The women, the food. I'm so thankful for this recipe. That's the way I learned to do a Lasagna and seeing it here makes me feel all fuzzy and warm. Big Thank You from Germany!

4:43 for anyone interested, soffritto is also used in French cooking and called mirepoix. It's also used in German / eastern bloc cooking but I can't remember what they call it. Basically, it's an awesome base for any saucy cooking.

The channel 4 show was excellent. It's a must watch. I made the fresh pasta and Bolognese after watching it. Delish. Bought the book " Simply Italian " last week. It's the Bizzo 👌👌👌 Cheers, from Dublin 🍀

Yummm!! So looking forward to trying this recipe!! Thank you so much for sharing your recipes beautiful Chiappas sisters. I love Italian cooking but it sometimes seems like a daunting for me to commit to making something delicious in case I don't do the dish justice. It's definitely reassuring and comforting to watch these videos because you make me feel inspired to attempt. So thank you all xx

Remember to experiment as much as you can too! Who knows what great new flavours you could discover. Just remember to taste before serving it though, it can result in you gaining an... interesting reputation among your friends. Had to learn that the hard way in high school.

love it! my nonna used to put a lot more stuff in it, and we still do the same in my family :P i layer mozzarella and prosciutto cotto between the pasta sheets, and i like to use lots of white sauce. we call it pasticcio instead of lasagna because its a little more messy!

I tried this for a small potluck party two weeks ago. Gosh, one HUGE tray wasn't enough for 10 people. That's how yummy it is!

Really nice! I mean, it's not so common to find Italians who make lasagna in such a good way although living abroad :) My nonna (so also my mum and I) used to add a pinch of nutmeg in the white sauce and since we're from a city close to Bologna, we love Green Lasagna (but I'm glad to read that detail on your website!) ^^ Good job!

My grandparents were from the south of Italy, and settled in New York City, where I was born and grew up. We always made the Italian Lasagna with spaghetti sauce, ricotta, and my family always added mozzarella, as it tasted even better! When I moved to England and watched Michela on television doing the Classic Version (which originates in Northern Italy), I made it and loved it just as much! I do add a sprinkling of mozzarella to the parmesan, as it truly is extra delicious. Her video was a bit different than this--and she made homemade spinach lasagna sheets--but I used the plain lasagna sheets, and like her sister Romina stated in this video, I blanche it first, if they are pre-cooked, as I find the pre-cooked lasagna sheets have a heavy starchy flavor if you just layer them dry. Better yet, I usually try to buy the fresh lasagna sheets! Just did a search and found the link! www.channel4.com/programmes/simply-italian/articles/all/basic-tomato-pasta-sauce-recipe I also found the link for her Lasagna Verde (Spinach Lasagna), which contains pesto and mozzarella. I prefer the plain pasta without the pesto, but I must reiterate something she says in her recipe for this Classic Lasagna: only put a few heaping tablespoons of bechamel sauce and ragu between each layer or it will turn out too soupy after baked. The Southern Italian Lasagna that so many of us were used to making actually had lots of tomato sauce, etc. between the layers. This recipe is different. I have not partially precooked that kind of pasta before but I can definitely appreciate why you do.. I will partially precook mine the next time around. Great idea. :)))

+Rainbow Gardens if you use fresh pasta or dry pasta sheets that are not precooked, simmer a few minutes. If you use the precooked dry pasta sheets, I have found if you blanche them a few minutes, it takes out that starchy taste after baked.

This is how I make my lasagna as well. Except I always add basil and thyme to the ragu, and no celery. I don't feel like the celery is really necessary to the taste, with both onion and garlic in. But maybe I shoud try it next time.

This looks great but I've been looking for a recipe of yours I've used before, I think it may have been for Simply Italian but I cant remember. I think the ragu/béchamel are the same but with spinach pasta sheets. What quantities should I use to make the spinach pasta for a lasagne? By the way, it was literally the best lasagne I'd ever eaten!!!!

This is very much the traditional italian way of making lasagna (lasagna originated from Italy). Adding ricotta, mozzarella, or mornay sauce, is a variant of this. But there are also more progressive variants like vege lasagne, or even salmon-spinach lasagne. The only real limit is your tastebuds =)

+Minnah Ayman that is the southern Italian recipe that many of us were used to. The Chiappas made the Traditional Northern Italian Lasagna, which is different but just as delicious!
