I do mine in the skillet first like that too. Before putting it in the skillet, I pour a little vinegar on it, all over , then I lightly coat the roast on both sides and the ends with flour. I'll add Montreal Steak seasoning by McCormick, and add a few dashes of Worcestershire, garlic minced, and some beef broth. (just enough liquid to almost cover it. (reserve some of the liquid at this stage, for the gravy). Then put it over into a cast iron dutch oven or a crockpot at this stage with onions, chopped in chunks and spread all on the top of it. I'll put in the potatoes more onions, and carrots in, the last 1 1/2 hours. (just dice them the same size).Total cooking time about 3-4 hours. (350-375 degree pre-heated oven).
Your roast looks delicious and so do the veggies! I agree with you about cast iron. If I could have only one pot, it would be cast iron. The roaster you used is great too. I have a large one just like it. Have had it for years. Nothing like a low and slow cooked roast with roasted veggies on the side. Easy and delicious dinner!😊❤🥰

Nice classic recipe. I would definitely add a bay leaf and thyme to the cook. I wish beef was that cheap here in California. We are really F****d here lol. Sorry about that but yum you have it going on. Karla in Cali.
A great fall and winter favorite in my house. I’ve been craving a good pot roast for a while now, I make mashed potatoes or rice with mine. I can’t wait to make another one. 😋
Talli Faye. I make my roast the exact same way you do. Here in Ohio we have Giant Eagle near me. When I buy a roast like yours, it starts out big but shrinks down to the size of a cantaloupe. The stores up here must inject their meat with water and additives. That's why I bought deep freezers and buy my beef a half a large beef at a time. So much in savings and way better.
