I love what u said about becoming a chef. My first time trying for a job in the kitchen was about 16 years ago. It was a small Italian joint and the guy asked me if I ever worked with dough. I lied and said yes he took me back threw me a dough ball and told me to stretch it out to 25 inches. Needles to say I had no clue what I was doing so he then proceeded to ask me to cut an onion. I knew how to cut an onion but not properly. He told me to get the fuck out and was PISSED. Anyways I'm a sous chef now at a high end steakhouse and am still climbing for the top. I want to open my own place sooner than later.
You’ll be putting me in the hospital using all that salt. I go in to A-Fib if I in take salt. But looks wonderful! I’ve all always wanted to try beef short ribs! Thank you Chef!!
big daddy I am in SC born and raised here. I do short ribs, cook everything in vintage cast iron on a 1930s gas stove, and then we eat it over rice of course,,,,,,,,,,,

Have you ever tried getting lentil flower making a dough with water and bit of olive oil (Not to wet, not dry) little salt and making little croutons (How ever you spell it) baked in the oven...... they are quite good
WEAR EVER also made the squarehead roasting pan and lid/griddle that the MKT(mobile kitchen trailer) uses, although mine are not made by them. You can see them in my 2nd and 3rd Christmas turkey videos.

I bought what I thought was beautiful short rib from Costo. Got them home and they had sliced them long ways real thin. What a waste it was. I was so damn pissed
