Interesting solution but I feel the most optimal solution would be to reduce the farm to table distance. This could also have negative impact in the socioeconomic status. The price of the food will substantially increase as they will last for more days. Earlier these perishable produce needed to be sold within a certain time or else it will not in a in a consumable state, though it could definitely be turned in to compost and rejuvenating the fertility of the top soil. I am also wondering about the carbon footprint in manufacturing the Sabjikothi, probably way less than the traditional industry, I guess, but it does not seem carbon neutral. Thus labeling sustainability seems a little counter intuitive to me.
Problem 1: Vendor ki sabji dikhegi nahi to bikegi nahi.. Kyuki jo dikhta hai wo bikta hai. Problem 2: Sabji bechte time chamber khula rahega to ye system kuch kaam ka nahi hai.. Problem 3: Ek fungus wala sabji andar chala gaya to sab kharab ho jayega.
