Great explanation! But I have one question.., is it possible to substitute the protein? In most foams you can feel the taste of the egg white, and that really bothers me. Any other suggestion? Thank you!
+Larissa K. I have heard of people using Aquafaba (the liquid that comes in a can of Garbanzo beans) and having good luck with it, but we haven't done our own experimentation yet. Will definitely be giving it a try soon!
+Luis Eduardo Bologna Hmm good question. I think you could follow the technique above but make a very strong ginger syrup in place of the Demerara syrup I used. If you try it, let me know how it goes!
