I have shown two types of coconut rice in this video, one is temple style coconut rice and the other is a bit unconventional but equally delicious
temple style coconut rice recipe
As a child, I used to love the coconut rice served as prasadam at temples. Today let us see how to make prasadam style coconut rice
ingredients
1 cup is 250 ml
6 cups boiled rice
1 fresh coconut / 2.5 cups grated coconut
cashewnuts
2 tsp mustard seeds
2 tbsp channa dal
2 tbsp urad dal
2 red chillies
3 green chillies chopped
4 tbsp coconut oil
curry leaves
hing 1/4 tsp
1 tbsp ghee
Salt
Sugar 1 tsp
Procedure.
To 6 cups cooked warm rice, add 1 tbsp ghee and a little salt . Mix gently. Keep aside.
Take half a cup of the grated coconut and make paste by transferring to a mixer jar and blending with half cup water.
Heat coconut oil in a pan. When the oil is hot add chana dal. Add in chana dal first as it takes time to cook it
Add urad dal
Stir for 1 minute
Add mustard seeds
Add red chillies
Add roasted cashew nuts
Add hing or asafoetida
Add ginger, green chillies, curry leaves
Now add grated coconut. Stir on medium flame for 2 minutes
Now add the prepared Coconut paste
Mix well.
Now add in the cooked rice
Mix gently
Stir on only high flame for 2 minutes
Switch off flame
Now delicious Coconut rice is ready to be served. You can have it as is or eat it with papad/ pickle or raita.
Or you can have it with a spicy curry or stew.
second type of coconut rice / coconut rice eith a twist
1 cup is 250 ml
I have pressure cooked 1 cup rice with 1.5 cups water
Add salt to cooked rice. Mix amd keep aside.
Heat 1/4 cup coconut oil
When oil is hot add 1 tbsp each of chana and ursd dal. On a low flame, fry till they turn golden
Now add
1 tsp mustard seeds
2 dry red chillies
1 bay leaf
1/2 tsp fennel seeds/ saunf
1/4 tsp asafoetida
Curry leaves
12 cashew nuts
12 raisins
Fry on a low flame until cashew nuts turn golden
Add 1 cup grated fresh covington. Fry till coconut turns light golden
Add cooked rice. Stir on a high flame for 2 minutes.
Add thinly sliced ginger and 1/4 cup fried onions.
You can add freshly chopped onions instead, while tempering after frying nuts. But I had fried onions for some other dish and had reserved a little. So I added at this stage.
Switch off the flame. Garnish with coriander leaves.
Serve yummy coconut rice with any vegetable stew / kurma and salad / raita.
