The last 'upbeat' part is called "Sargam" which is collection of musical notes in Hindustani classical music & has roots in the ancient Vedic Literature. Hindustani classical music has seven basic notes called swaras. These are Shadja, Rishabha, Gandhara, Madhyama, Panchama, Dhaivata and Nishada. We commonly come across them in their shortened forms as Sa, Re, Ga, Ma, Pa, Dha, and Ni. Sa is the root/base note and the reference point based on which an octave is defined. Together, they are known as the sargam.
For Americans it is easier to compare it to "Do Re Mi Fa So La Ti Do" which is a numbering/syllable system for notes in a scale that many Americans are accustomed to.

I believe the guy on the keyboard is Faakhir Mehmood, a well established singer who for some weird reason appears in this video on the keyboard. Im 99% thats Faakhir Mehmood considering hes pakistani and this particular coke studio is based in pakistan. Lol it would explain his sunglasses indoors since celebrities like wearing them indoors.

Those are riffs which are part of Pakistani and Indian Cultural Qawali which is a form of Cultural Pakistani and Indian Songs/ Music/ Message in which there are deep meanings and emotions, Those riffs are also instructions for background musicians, drummers and other Instrumentalist on How, What, Which note and When to play the instruments so they are also extremely difficult at Rahat Fateh Ali Khan's level unachievable by most their whole life.
