Just came back to say I made this over the weekend and it was the best salmon I ever had. I didn't have the jalapeño mustard so I did a 50/50 of ballpark and Dijon mustard with a few kisses of Frank's. I used a whole Costco fillet so I have more vacuume sealed for heat and eat dinners

Thank you for sharing this recipe! I’m going to try it out. If you could choose between the laser cut griddle VS the soapstone - which one would you choose? I saw your video on the soapstone and I’m sold on it - thank you James!

Another great video James! I do have a question: if you have to choose one accessory, which one of the three would you recommend? Soapstone, cast iron grid or laser cut half moon? I am thinking soapstone here because it does everything? P.S.: having the temps in the videos also in Celsius degrees would personally be very helpfull.

Great cook - think that you may have rinsed off some of that smoke after the cold smoke when you rinsed? I also noticed that in a recent video you were back to using Kamado Big Block, today back to JD?

the smoke flavour doesn't rinse off... i am sure if we soaked it for hours we could impact taste, but not a quick rinse. I buy the most of those two brands, whichever is on sale. JD has sent me some which I am thankful for but I can count on my fingers the number of free bags I have received in my life so its hard to say no to KJ big block when it comes on sale for nearly half the price some times

@@SmokingDadBBQ James, can you tell me what the story is with those laser cut stainless steel grills? When I look at them on the internet I see two totally different grills, with the same name and part number. One of them has cutouts that are all parallel to each other (like yours) and the other one has cutouts that are perpendicular to each other. Strangely Kamado Joe even shows both of these on the the same web page for ordering it. But you have no choice of which to get. It almost makes you think you'll get both. Any insight into this will be much appreciated.

There's no need to use the laser cut half moon if we dont have one is there? Also glad to see the kamado red crocs are still have enough traction to use in the rain!- glad im not the only one that BBQs in crocs!

Hi,Gonna try this as well. Have you ever done your own "Beef Yerky"? If you have or know where to find a good technique or recipe please share it with me. I am going all in för KJ as we are planning to renovate the kitchen. So I can't be "afraid" anymore for using it more often. As it is winter in Sweden its gonna be interesting. Time frame is planned to be at least one month.

Great video. Just about to give it a try. Question though. You talk about cold smoke and one day cure - any suggestions on how long it should sit and cure after the 2-3 hour cold smoke. If I'm planning on eating tomorrow night, should I be cold smoking now or later today. Not sure if I can over-cure... Thanks!

its more forgiving than you think. i think either would work fine but i would probably opt for the later time just as i like the texture more natural than working its way towards jerky

If you were to just hot smoke the salmon, would you let the cure go for 12 hours, rinse, oat dry and then hot smoke it?
