Indeed. Blake has its uses. E.g. super light slim loafers. Even Gaziano & Girling do a blake stitched loafer. However, blake stitch has no place on a brogue!

Some shoes are just too classy to put rubber soles on. I personally would not put leather soles on these beat up Cole Haans...I would definitely do leather soles on some Allen Edmonds or more classy shoes.

Blake stitch. If you look at the sole stitching machine you can see the shoe fits on top of an arm or "horn" and the shoe is rotated around this horn (usually 270 degrees) that carries a looped thread and stitches are formed by passing a heavy hooked needle from outside the shoe through the outsole groove, the upper and the insole and "jerks" the thread up from the horn back up through the outsole groove where a shuttle forms the loop for the knot that the machine pulls back down into the sole. This horn feature is typical of the various Blake stitching machines and is small enough to reach well into the toe area for stitching. Blake stitched shoe construction allows for a lighter, sleeker and more flexible shoe. Note that the back/heel of the shoe can be placed on the very back edge of the outsole since there are no stitches there to avoid covering. Since there is no void formed by the thickness of a welt, there is no need for a filler of cork or foam.

Ricky Rilveria theoretically you could but you probably wouldn’t want it. Putting cork in shoes that did not originally have it could make them feel lumpy or unusually tight on your foot. Keep in mind that cork is used in shoe making to fill a void that is created in the construction process. If no void exists in a particular pair of shoes then adding cork is counter-intuitive.

Ricky Rilveria Cole Haan shoes are very comfy in the short run because they use athletic foam similar to what is used in running shoes. Unfortunately, I have to replace my running shoes semiannually due to the foam becoming compressed over time and no longer offering support (the rule is about every 200-300 miles). The same can be said of Cole Haan shoes.

That really depends what kind of shoes you have. If you spend 500+ dollars on a lovely pair of Oxfords, why spend 500 more on a new pair when you can have them resoled for 100?
