Pasquale is the best Italian chef on you tube , i hit thumbs up before I watch & never have changed that vote. This is the perfect pasta primavera & the perfect pasta for this recipe & one thing I may do is use vegetable stock instead of chicken stock , but I am not a vegetarian. A loaf of Italian bread on the side to slice and butter. Perferct spring/summer meal. Great chef. I lived in Foggia for 3 years . His cooking reminds me so much of my friends grandfather who we lived with. Especially the paperdelle with meat sauce. Very aimple and typical bolognese of that region. No milk or celery or carrots. Ciao
