I met Jamie working down in Wildwood NJ. before he went into the CIA and on to Commander’s Place. I became friends with him and moved up to Ocean City and worked with him at Harrah’s in the early 80’s. He was a great person and better Chef. He taught me a great appreciation of food with great spicy flavor. I have to try his recipe. RIP Jamie!!!
I had not heard of Chef Shannon before watching this, and didn't realize he had passed until looking at the comments. But I picked out that Philly/S. Jersey accent immediately. Sorry to hear he's gone.
I wish when chefs showcase dishes like this they show the full speed service version with mise en place set up and all too... and the yelling and chaos and what not.
I had the great pleasure of dining at Commander’s Palace and getting a tour of the kitchen by Chef Jaime. I was so sorry to see him pass away so young right as he was hitting his stride.
2022- that's what I was thinking. Don't know how old this actually is as Shannon died in 2001. Sometimes I add garlic to my hot wings sauce, now this has been wondering about reducing the hot sauce down before I add butter.
Black pepper is actually a fruit. You know some other cooking dork would make a scene about it being A FROOT NOT A PEPPER, so they restrained themselves. I think it should count as 6 though!
@@AskAW - we went to New Orleans in December & ate the most amazing meals!! 😋 I came home & tried to make the same but it didn't turn out well. I should have added more butter!! It came out dry instead of creamy. 😩
