We have another large family coming to visit!! It's a busy day of cooking a large quantity of food, cleaning the house, and tidying up the yard before friends came over for supper. Homemade Mayonnaise
2 fresh eggs
1 lemon, juiced (approximately 2 Tbsp.)
1/2 tsp. ground mustard seed powder
1/4 tsp. salt
1/8 tsp. pepper
2 cups oil (I like extra virgin olive oil)
Place first 5 ingredients in a jar or container with steep sides and blend together with immersion blender. Add the 2 cups of oil in a slow, steady stream while continuing to blend. The mixture will thicken and you will hear a change in sound when everything is blended together and thick!! Will keep in refrigerator about 2 weeks.
