Any recipe you see that has cool whip ( I can hear Stewies' voice in my head say "cool whip" ) you can always adapt it your own tastes, needs and preferences. Just make your own! It's not set in stone.
Girl, I made this for my hubs birthday, I thought he was gonna lay an egg, while licking the bowls and spatulas lol. Everything here at home, is all scratch all the time (pesky food allergies) he loves everything I make. Meeting me, he gave up prepackaged, short cuts(canned soups etc) and restaurants. 25 years of marriage, he, my best friend & soul mate, has declared THIS recipe as his fave of all time. I use to make this waayyy back when I 1st got married w/Jello pudding n cool whip, but yum all homemade I'm 100% n can't believe I never thought of this. Thank u Sam😉💞

Sam, is it possible to use whipped cream instead of pastry cream for this? If so, would you have to do something special to the whipped cream to make it more stiff and less prone to melt?

I don't know how you can loosely use the word 'Eclair' in your video title, and you also criticize others using instant vanilla pudding and cool whip in their recipes. And, then what you do in your recipe? You use graham crackers in place of the puff pastry. This is like making a No-Bake pizza by using slices of white bread for a pizza crust. Are you not creative enough to replicate the flavor of an Eclair puff pastry instead of taking short cuts using graham crackers?
