Today I am sharing another “What’s for Dinner?” video, where I take you along in cooking with me this week. I hope you enjoy this video and get some dinner ideas.

Pickled cabbage:
Cube up 1/2 a head of cabbage, slice 1 bell pepper, 1 carrot and 1/2 of a onion. Slice 5 cloves of garlic. Place all vegetables into a bowl.
To make the marinade, add 4 cups of water, 3/4 cup of vinegar, 1/4 cup oil, 4 TB salt and 3/4 cup of sugar all into a pot. Bring to a boil.
Pour the marinade over the vegetables. Bring to room temperature and then distribute into jars and refrigerate.
This will be ready to eat in 24 hours.
Chicken Tacos:
Marinate 6 boneless/skinless chicken thighs with oil, salt, pepper, paprika and chili line seasoning.
Grill on medium/low heat until cooked through.

Refrigerator pickles:
Ingredients:
Pickling cucumbers (I use about 3 pounds)
8 cloves of garlic (roughly chopped)
3 bay leaves
1 cup of chopped dill
10 black peppercorns
2 TB of pickling salt to 4 cups of water
Directions:
1)Wash and cut both ends of the cucumbers.
2)Place chopped dill, garlic, bay leaves, pepper corns in a large jar or a container with a lid, then put in your cucumbers.
3)In a medium size bowl or a 4 cup measuring cup, add 4 cups of lukewarm water and 2 TB of picking salt. Mix until completely dissolved.
4)Pour over the cucumbers. Repeat until all of your cucumbers are completely covered with water. (I usually have to repeat 2 times)
5)Place into the fridge for atleast 24-48 hours, and then enjoy.
