I've made your deli meats so many times and gave them as gifts. Even the hubby likes them. I never thought about using the mixer, cause I DO have one of those. Just delicious.
My mom use to make the best antipasto salad and put salami in it i'm going have to make some of this and put it in my antipasto to give it that flavor my mom use to do. Boy do I miss her. I remember her making sandwiches using just cucumber and mayo. and other sandwiches without meat. Right now I'm having my lunch a sandwich with avocado, baby spinach tomato, pickles and red onion. not miss meat at all these days. and if I do I can always come to your channel and whip up any kind of meat I crave . Making this tonight! Going to try using beet juice instead of water to get that red color, and chili oil instead of olive oil cause we(even the kids) like it hot. Should make awesome pizza with our homemade sauce, and macadamia mozzarella!

If you really want nice seitan. Make it, then slice it, then soak it in the fridge in the same spice and liquid broth you use in your recipe. This makes amazing seitan, it is how we do pepperoni.
I made this yesterday and it came out so nicely. Put in on pizza last night and chopped up w/ potatoes today. Very flavorful and the texture is great. I've had trouble with seitan sausage texture before, either being too dry or too doughy or bready. This was nice and firm and just a bit oily. You do a great job of making recipes w/ a ton of ingredients easy to follow. I also love that I could tackle this with my moderately well stocked vegan kitchen w/ out having to hunt up special ingredients. It was fun to have pizza almost completely homemade from scratch (I used Follow Your Heart mozzarella). Dough, sauce, pepperoni all from my own kitchen; amazing! :)

I couldn't handle the vegan meats either lol no flavor what so ever. Connie, I finally made the vegan pepperoni! It’s so good, I made four pepperoni logs , ate one just before cooling off, lol..can’t wait to add this to pizza or calzone. I don’t have all the household equipment you have, but I’m improvising and the recipes are coming out good. I’m learning so much from you, thank you for sharing your knowledge.
Oh one more thing. I made the fig salami with cheesecloth first and wrapped it in parchment, tied it with cotton string and steamed it as you suggested. It worked out beautifully. I am going to try that method with this pepperoni. Thanks sweet lady.
Oh my gosh...I can't wait to make these! Well, I'll have to wait until the weekend, haha, but I'm gonna make them! Since I don't have one of those pressure cookers, how long would you recommend steaming them on the stove in a steamer pot? About the same time as a seitan loaf?
Yum! I also add red beet powder (used to use frozen cooked beets, but then I found beet powder from Piping Rock reasonably, so easy to add a few spoons), makes it nice and red like ordinary pepperoni, plus it is good for us... I wrap in parchment, then alu foil on the outside, works great! ☺️ I will try your recipe next time! 😊
Vegan cooking is such a fun science project each time, and a great way to use up leftovers. I love your recipes and I also love making up my own "clean out the fridge" recipes :-) A new pressure cooker would be great to help me do that!

Omg I just made it,,, it's fantastic. I used white beans instead of rice, but the rest was the same, steamed for 30 min in pressure cooker. Came out great, kinda like a sausage/spicy pepperoni. It's still warm and a little soft but taste crazy good...... I did notice this recipe of yours didn't have your signature maple syrup,, lol,,, it's good
Other change was used smoked salt for all the salt, was amazed how all these ingredients made it taste like sausage/pepperoni, very good, already ate a whole link

Recipe looks great. Will try it soon. I've been experimenting with different ingredients to make kielbasa. The sausage tastes OK but still need lots of work to make it somewhat similar to how my dad used to make it. Also, I used the pressure cooker the last time i made it and it turned out great (except I did not steam it as long as you did). Anyway, thanks for the great video and recipe.
I prefer my French rolling pin over the more common “American” style. I haven’t tried it with Coriander, that might be a challenge. It’s perfect for spices like rosemary and cumin. Do you always use your rosemary whole? Is there an advantage to doing that with some dishes? After your video I had to break down and buy some gluten!😁 I’m not vegan but have been a vegetarian almost 50 years. Thanks for your videos.
Mmm! Looks delicious that peperroni! No Tomatoe sauce on your pizza? Does your family just like the tomatoes instead? Just curious or just veggies was the plan.😃 Looks great with all those veggies, olives, my favorite. I never really liked a whole wheat crust but I purchased organic whole wheat flour and did 50/50 and it was delicious.
Beautiful, how much liquid smoke do you think you would’ve used? Do you ever make vegan yogurt, some pressure cookers have a yogurt setting, does that one? If so, I’d love a video, along with a tamales done in the pressure cooker. Thanks Connie

I would just like to comment about the environmentally friendly aspect....It's great that you are using less plastic, but what about aluminum or foil as we call it? I am a Brit living in Sweden, and foil is much worse than plastic. It doesn't break down naturally and has to be recycled with aluminium waste here. I basically never use foil. But all plastic I use gets recycled. 95%of our waste gets recycled, even our leftover food. After processing, it goes to the town's plants etc as manure. I realize that not everybody can do this as it depends on the recycling available where you live, but surely foil is still as unfriendly even in Canada? Please let me know what you think. I really do think you should be put forward for an award as an innovator within vegan cuisine :)
we recycle our alum paper the small bits of plastic end up in the garbage. unfortunately, there is no other way to make it ...if u use the cheesecloth it gets very dry But I pray that when people hear me talk about the environment that they see what is better for where they live. I know not every place does the same thing. ANd thank you! ur very sweet Blessings :D

What can I use instead of the apple, sadly one of my daughters is allergic to apples. I was thinking of using a pear but I would like to hear your thoughts on that.

I will have to try these with the agar, I tried your older salami recipe with some spice variations. It was a little soft for my taste. I will let you know as soon as I get it done.
yes I just started to use agar makes a big difference mine wasn't soft at all...when I measure it's not level always more so maybe I used more VWG then u ...add more to make it firmer let me know :)
you don't need the pressure cooker steam them on the stove. or even in the oven put some water in a pan and add the sausage wrapped the way I showed you put them on the pan. cook for 60 min at 275 or 300 covered with aluminum. paper so the water won't excape. see how that works :D otherwise do double boiler and steam them that way on the burner
