Being from the South I could eat country ham every day! I used to live in Europe and I would put country ham up against any Spanish or Italian ham, it is absolutely delicious. Here's the thing, the traditional way to eat country ham is to slice it, not super thin but not excessively thick, and then fry it in a skillet. Then you remove the ham and deglaze the skillet with coffee and water if you need a little extra liquid. It helps if you have fried quite a bit of ham as you need a good amount of grease from the ham for this to work well. Then simmer the liquid for a while and you have red eye gravy. Pour this over some biscuits and serve with the country ham for the best Southern breakfast you could ever have!

Im from Casa Grande and now live in the Arkansas Ozarks and just cured a ham and tried it for the first time. I wasnt sure what it was supposed to taste like and that is how i came across this video!

OMG YES!! You didn't mention the ham you cooked the other day was the one you cured! Dang it. I would have snuck a taste (; Boy that is an intimidating process for sure. The end result looks similar to our canned ham.

Excellent video. You all did good. Don't get so involved and worried about the whole process. After all it is a cured ham that our foreparents ate on the Conestoga wagons everyday. No big deal. Please reach out to me for any questions you have, be glad to help you. Food historian and food safety specialist by career training here in Missouri. Yes it is salty, it is supposed to be like that. That is the beauty of it. Bits of the meat and the rind are awesome seasoning in beans and collards.

I've never had a country ham that didn't have that texture, and/or didn't taste like bacon had been rubbed on a salt block before eating the salt block.

I love your channel, though I have to admit it does sadden me to see videos like this after watching a video of you helping a malnourished mother give birth to her piglets. They are wonderful animals that deserve to live full lives and not killed for food. Saying this with love. A different perspective to think about.
