Great recipe Billy! You might want to try a little brown sugar, maybe half a cup. When camping my uncle use to dig a hole in the ground and cook the beans in a cast iron Dutch oven. A layer of hardwood coals on the bottom and top, cover with sand, and cook all day. Come suppertime dig up the beans, yum! He used salt pork too. Take care, Ossie

Hey Billy . Les fèves regardent comme ils sont vraiment très savoureux . Down here in New Brunswick we eat lots of beans in the winter. We have soldier beans which are a large bean. Very good! I am working my way through your videos. I am a fan of all things history. It would be hard to live like the old time people did, but it is fun to watch and try old things. Merci beaucoup d'avoir pris le temps d'enregistrer vos aventures . Grand canal Grand RU-vid . Maintenant, pour moi , de retour à Billy Rioux !!!!

Enjoyed watching. Interesting recipe. Grew up on US southern style cooking. Never heard of adding apples to beans. Sounds like it would be a good addition. Suspect what you call "lard" we call fatback (salt pork or same fat that hasn't been brined/salted). Fatback or non-smoked side meat (same source of meat from the hog as bacon) long been a traditional seasoning down here. Molasses - yep! Good stuff! Thanks for sharing.
@oldtimerlee8820
@oldtimerlee8820 9 лет назад
***** Usually not available commercially, at least around here. In this area it's home grown or from a local fellow who butchers hogs about every 2 weeks or so, during the winter months. Any fatback that he doesn't have a special order for goes into sausage.

Here's a way to get your beans much easier(faster) and just as good,for a 1lb package of beans use a largish pressure cooker, read this method on a bean package a coupleyears ago,(smaller cooker use half the beans at a time),15 minutes at 15 lbs pressure will do it,beans pretty much done,(I would start with 15 min,and workup as needed each time) too long and you get mush). They come out just as well as soaking,but be careful not to over fill,and have lots of water relative to beans,keep a watch on cooker to be sure nothing blocks the vent(you want the weight hopping and hissing a little ) ,then go ahead as usual. I often use apples,( I also use brown sugar substitute,and often sugar free maple syrup-diabetic-) I also use molasses,and often go ahead and use real syrup,and brown sugar(gotta live a bit now and then) ,have never tried lard but use lots of salt pork(real heart healthy ,that!),and usually a goodly gob of barbecue sauce (whatever I have around).I'll have to try your way ,sounds great. I never watch your channel without at least getting a grin,also spend a lot of time watching another couple of Canadians,-Bushcraft Bartons,and Loreena Mckennitt, If I'm down or bothered her music never fails to cure me! Take care and keep the video's coming!
