We are going to cook up some wild food on the homestead! Today Celia is foraging for wild poke salad leaves on the mountain and show you all how to cook and eat it safely. Poke salad, also known as poke sallet or pokeweed is an extremely flavorful and delicious food that you can find an abundance of right in your back yard! Don't mow down these tasty weeds, cook them!

I love seeing you pass these forgotten methods of survival and eating well to your children. I was taught how to forage and farm by my elders I didn't remember quite a bit however it instilled the deep love and respect I have for what is provided and have re learned most of what I forgot with my daughter and yes we are passing along our knowledge along with written word. I would love to see you write a book or start a series on this.

As surprising as it is to me, you're not the first person to mention that! It is possible I may try to put together a "field guide" for some of the more prominent plants in our area.. I'm not sure how you would go about publishing something like that, but if you've got your notifications turned on you'll be one of the first to know!

I remember my mother and her sisters washing and cooking big pots of Polk Salad. I never tried it though and I'm not sure why I didn't . Maybe it was the scary stories my grandfather told me about Polk Sally who roamed the area at night and would get little kids! This was a fun video! Good job, Celia and Ivy! Thanks for sharing!

I love it with sautaed onions and scrambled eggs. Thats how my mom made it. Im 73 ,my mom has been gone for about 15 yrs but it remindes me of her. Cheers !

Beautiful tradition to show the little princess, I brought my 3 daughters berry collecting and they loved it, ended up eating more then We saved.

We cut the stalks on the young plants into like button slices, rolled it in a flour, corn meal, pepper mix and then you can bake it or fry it.. It's similar to yellow squash.. It's a good addition to the salad as well.

It's very good...tastes like spinach...like mine cooked with a little onion.. and little vinegar and hot sauce poured over... after it is cooked..also good real butter and cheese mixed ...the way spinach are sometimes done

Got me wanting to try it now! The deer love it around here, don’t know how they can munch on so much of it raw without causing them any problems but they’ve just got the digestive system that can handle it I guess. You definitely want to stick with the young tender green shoots and avoid the purple parts, stem, berries, older leaves etc.. Great video, love to see the little ones growing up right!

I've never seen deer eat it before. That's a new one to me. We love the first little shoots that pop up in the beginning of spring especially!

@@SteepintheWoods - Yep those first young leaves coming out are the ones to get and the deer around here (Northeast Georgia) seem to know it! almost all the tops are bitten off of the plants by the time I get out there lol… Thanks for the video encouraging folks to live off the land because it’s the way a lot of us were raised but many are forgetting.

I have poke weed plant over 6 feet tall in my yard. My mom used to pick it and boil the plant 3 times as you have said. She knew what she was doing. I'm not sure just yet to use it. I'll keep watching and learning before trying it myself. Thank you

It's a delicacy for sure, when in a hurry grandma would just fry it up in bacon fat and serve it as is. Both her and I were a little crazy but never had any other issues from consuming it that way LOL

yum! my granny use to make it also...although I prefer turnip greens, mostly because Im not sure the difference between poke and milk weed different parts of the country tend to have different names for such things

Milkweed is different, but still very useful! It takes a little while to cook poke salad but we think it's worth it! Mostly because it's everywhere up here!

In my neck of the SE USA, it's called Poke Sallet, also called Pokeweed. It isn't known as a salad, here in central NC. We're not limited to the growing tip, when harvesting. Larger young tender leaves are also fine. It takes those to get enough to make it worthwhile to cook it. NEVER harvest any parts of the roots or berries. And, once the leaves are mature or near to maturity, leave them on the stalk, as well. It is important to cook it properly, and pick at the right stage of growth. If not picked correctly it is poisonous. All parts of the plant, including those bright purple berries. Please do your own research. A starting place is the section on Toxicity in Wikipedia's article on Phytolacca americana (pokeweed). Don't let children eat those pretty berries!
