Cooking with a Titan: Tailgate Edition
As part of Stay at Homecoming 2021, the CSUF Alumni Engagement team would like to bring you two unique tailgating recipes by two CSUF alumni. In this episode we will learn to make ribs and a delicious chili dip from Chef Carlos Leija ’91. In addition, we will learn to make chicken wings, jalapeno poppers and pizza from Chef Rafel Salazar ’10. We hope you enjoy this special edition of Cooking with a Titan!

---- RECIPE BELOW & INSTRUCTIONS ----
Titan Chef Carlos Leija ’91
Ribs
Ingredients:
½ cup brown sugar
2 tablespoons kosher salt
2 teaspoon black smoked paper, chili powder, cumin, and oregano
1 teaspoon garlic powder, onion powder, brown mustard, celery salt
Quarter teaspoon of cayenne pepper
Instructions:
Mix all ingredients
Rub dry mix all over uncooked ribs and cover, let sit in fridge over night
Place ribs into foil pouch
Take a beer, apple cider vinegar, buffalo wing sauce, and Worcestershire sauce and combine to taste preference *about half a cup is needed per rib pouch
Pour liquid into rib pouch and close, place in a 250-degree oven for 2 ½ hours
Remove the ribs from oven and place into a dish with simmer liquid to sit while preparing BBQ
Place ribs on BBQ, 5 minutes per side or until each side has a nice crisp to it
Chili Dip
Ingredients:
2 cans of chili (no beans)
2 cups of shredded sharp cheddar cheese
7 oz diced green chiles
8 oz cream cheese
One package sausage
Instructions:
Cook sausage in pan, drain and set aside
In a pot add all ingredients and cook on medium until cheese is fully melted
Add sausage
Server warm
Titan Chef Rafael Salazar ’10
Wings
Ingredients:
1 pound of uncooked wings
1/4 cup of brown sugar
1 tablespoon orange juice
1 tablespoon olive oil
1 table ponzu sauce or soy cause
1/4 teaspoon pepper, garlic powder, onion powder
Instructions:
First mix spices with brown sugar and mix
Add sauces and mix together to create a glaze
Add wings and mix to ensure all wings are covered fully in sauce/glaze
Let wings sit in glaze for about an hour *you can marinate longer to intensive the taste
Place in oven at 375 degrees on parchment paper
Pour sauce over before placing in oven
Cook for about 10-15 minutes until golden
Stuffed Jalapeños
Ingredients:
6 large jalapeños
3 oz shredded soft cheese (mozzarella and/or sharp cheddar)
2 oz ricotta cheese
4 oz cream cheese
1/4 teaspoon of salt, onion powder, and garlic powder
Strips of bacon
Instructions:
Mix cream cheese, shredded cheese and seasonings together really well, set aside
Cut jalapeños to preference
Remove seeds
Stuff peppers with the cheese stuffing *you want them full but not overstuffed
Take a strip of raw bacon and wrap around the pepper trying to cover the whole pepper
Place on a baking sheet
Bake at 375 for 15-20 minutes until bacon is cooked to your liking
Pizza
Ingredients:
2 cups flour
250 mil water
1 quarter teaspoon yeast
2 tablespoon sugar
1 tablespoon oil
Pinch of salt
Instructions:
Mix dry ingredients together
**When adding salt keep away from the yeast, don’t place on top of yeast
Add in wet ingredients
Blend all together
On a flat surface roll the dough together, kneading
Place in bowl and cover in a in a dry area for about 1-2 hours to let the dough rise
Once dough has double in sized
Kneading the dough again to remove air
Split dough into 2 halves on a baking sheet and cover with dish towel and plastic for about 10-15 minutes
Take dough and stretch out the dough to personal pizza sizes place on cooking tray
Add pizza toppings of choice
Place in oven at 350 on center rack for 10-15 minutes
