Hi Malin, in the south of Italy especially Basilicata and Puglia black chickpeas are cooked with cardoncelli mushrooms (no idea of the english word:) in a kind of soup and topped with cooked dark greens (we call it cicoria). These types of dishes are traditionally vegan as people could not afford to eat meat. Love your content, xo from Milan

Thanks a lot for sharing so many vegan recepies. I’m in the way to begin vegan with some difficulties as it’s stil difficult for me to forget eggs , cheese and milk......but I’m sure I will! Just 2 suggestions if I can (I hope not seems inappropriate), the 1st one: to avoid to remove the lemon zest one by one once you have cooked the chikpeas, you could put them into a small gauze bag so that you can easely remove it later; 2nd one: if you add the salt at the end of cooking, the peal of chickpeas will remain softer. I’m really sorry for my bad english 😅....thanks again to be so sweet, polite and enthusiast....I sincerely hope that your channel grows quickly because you really deserve it!
When soaking chickpeas add 1/2 a teaspoon of baking soda rinse it the next day then cook for 20 mins in a pressure cooker. Et viola! Works everytime 👌🏻👍🏼 Love your channel ♥️♥️♥️♥️

All three recipes are so creative! I feel like I've seen a million curry inspired chickpea stew recipes so really fun seeing you use things like lemon rind, and making mayo and tuna sammies. Not sure which one to try first!

That's 100% what I need :D I've recently cooked more than 1kg of chickpeas: made falafels and hummus plus froze a lot of them as well as the reduced aquafaba so I will definitely need more ideas for them :D

Nice range of chickpea recipes, that vegan 'tuna' looks delicious. The hint about soaking time is great. I've tried making chickpea tofu using gram flour, that was great. Two chickpea ideas that I thought were good are chickpea cookie dough, and using aquafaba in chickpea omelettes. It's always enjoyable to watch good cooks in action.
Just loved the recipes! It’s really important to peel the chickpeas once they are cooked so we can get rid of the huge concentration of phytate present on their skin, which is really bad for our health and digestion. Thank you so much for your videos, they are perfect! 💕✨

This mayo looks dope! (and I don't even like regular mayo, ahah) I got black chickpeas once at my local grocery store. They taste no different from the beige ones, but they are maybe a little bit drier in texture :) I did hummus with them, also using black tahini to make an all-black hummus! It turned out to be rather grey, so I think I'll add charcoal powder next time, just for fun!
I love chickpeas too, in savory and sweets recipe. I put them in almost everything, stews, currys , soups, salads , tuna sauce and hummus , but I also made blondies and brownies and cookies out of chickpeas. Not very keen on aquafaba though

So glad your back. I actually cook the green and black chickpeas , I purchase from my local Indian market here in Culver City California. Usually you have to cook them way longer even when soaking over night. So I use a pressure cooker ninjafoodi on 40 minutes high pressure and then if they are still not soft enough I do an additional 15-20 min on high pressure. 😀 And then use them in any recipe. I use the kala Channa ( black chickpeas) in a mock vegan chili recipes . So I replace them for the red kidney bean instead. It is really good 😋 my Instagram is @myvegansol 😀
Mayo is so expensive, plus the kind I like has been out of stock lately. I have been looking for a good recipe. How do you adjust it to make it lower fat?
I think the fat is unfortunately the important part.. :( but if you use a cold pressed rapseed oil and soy milk, it's actually not that bad, kind of healthy fats :) maybe it works with linseed or avocado oil?
