My mom makes this every seabass opener except she makes patacones which is just fried plantain and that coconut rice with raisins for more sweetness

Fill your sink up with warm water then scale your fish under water to keep the scales from flying everywhere.

I ate the very first fish as a kid. I didn't know so I ate the whole fish, guts and all.

Looks delicious! But I can’t imagine anyone actually tasting the fish with all that heavy seasoning and strong flavoring sauce.

nope. Simeon strikes me as someone who owns a high quality restaurant but who hasn't personally run a line in fifteen years. blind, i could scale, gill, and gut a fish more efficiently.
