Dear Rachel, my confession is I've lived in Arizona for 30 years and I've never mastered the art of tortilla making. Both my flour and corn tortillas resembled something more suited to a construction site instead of the dinner table. Until now. I purchased a tortilla press and played your channel in the kitchen as I made corn tortillas. When they actually puffed up in the pan and turned out soft and muy delicioso I was so happy!!! Next time I'm trying flour tortillas. Thank you for sharing your techniques and knowledge!!

@@margaritariveria6940never heard of sweet bean tamales but that sounds really good! Tamales canarios use golden raisins as well as pecans, pineapple chunks, rice four instead of masa harina, and no lard. So many different varieties of tamales that most people outside of Mexico has ever heard of 😮🫔

Rachel, my grandmother used to make enchiladas with the masa in a thicker pancake than a regular tortilla. She’d fry the masa enchilada then dip it in enchilada sauce and add onion and cheese. Have you ever made these type of enchiladas? And I love watching you! 😊

Pancake style or "stacked" is the only way my family made them growing up, unless it's green enchiladas. Oddly enough, I like the taste of the powder ones once in a while and I love the way Rachel makes them!! Many people get stuck in their way but I think it's good to experiment for a change.
You didn't link the tortilla press you use, Rachel so could you please recommend a brand, material, & size for a good quality tortilla press? I noticed presses on Amazon in 6" 8" 10" & 12". If I wanted to use the press for corn *AND* flour tortillas is bigger better? There are also wood, cast iron, and aluminum presses. Help, I need a little guidance. 🤷🏽

I’ve been making tortillas your way since the first video you did. It’s so easy and delicious. The Nita masa is the best but hard to find here in Indiana. I was in sales in the late 70’s and one of my customers was a 2 person tortilla factory in a small farming town in California. They made the best corn tortillas and the Nixta masa is the closest I’ve found to theirs other than Bobs Red Mill but that’s too expensive for all the tortillas I eat. Lol. I tried making these before from your other video. I got mine too wet and when they were pressed they would not come off of the plastic. I will try these again as you made them look so simple. Your directions are perfection, so maybe it I get the yellow Maseca this time they will come out like yours! I had the white. My flour tortillas came out beautifully, so I am batting 50%! Thank you so much for doing the corn tortillas again. You are a great teacher, my friend. ❤
You have to account for the climate you live in or at sea level/elevation level. It should feel firm in your hand but still pliable almost like play dough. If it is to wet and still sticks to your fingers/bowl even a little just add a sprinkle of masa at at a time then mix. Once it has that play dough consistency you will be ready to have the dough rest for 30 min before separating.
I finally found a video to make corn tortillas that makes sense. Rachel, you are a very good teacher. I feel like I was in your kitchen with you teaching me personally 😊
Rachel, thanks for this video. I love homemade corn tortillas. I made them once & they got hard, though, from watching your video, I see that I did not wrap& let the masa sit for a while after making it. I will have to try again. They look so yummy 😋
Looks delicious I need to try it like this. I use the same kind of dough for bean tacos. I put refried beans and cheese in a uncooked tortilla seal it nicely and deep fry them

So excited I found ur channel. My Mom passed away 3yrs ago & sadly she wasn’t good at sharing her recipes w/us 7 kids and thought all was lost. Is there anyway to store these for future use ? I guess as I’m only familiar with store type that keeps forever & you fry before using. Do you not fry these for taco’s ??? Excuse my ignorance.
I wrap mine in paper towel then I put them in a ziplock bag and put them in the fridge. I don't like to keep them longer than 2 or 3 day...tes, you can fry them. ❤️

Rachel, first let me tell you that I love your videos. Your instructions are easy to follow and you voice is so calming. Today, i made mini corn tortillas following the recipe in this video. It was also my first time using my cast iron tortilla press that I’d purchased awhile back. I was finding that if I pressed the dough to the thinness I wanted, that the tortilla would not release from the bottom parchment paper. If I didnt press as hard the tortilla was thicker and released use fine from the paper, but again these were thicker than the commercial tortillas I normally buy. Also, when cooking them in my cast iron none of my tortillas ballooned like your did. I wonder if my heat was a bit high-cause at the end of 28 seconds (I actually timed it) on the first side I was getting color. I also was doing 28 seconds on the second side. Can you make any suggestions as to what may have gone wrong. I tasted great and Hubby gave them 2 thumbs up.
Works best if there is no color at first flip, might be too hot but you don't want it too low either (mine is usually a little lower than medium)...then after flipping wait the same few seconds then flip again, that's when it usually puffs up. Don't worry if it doesn't puff, they'll still be delicious. I'm proud of you. ❤️
@@rachelcookswithlove TU for your recommendations, I am continuing to practice making small batches of mini corn tortillas each day. I’ve got the sticking to help plastic/parchment solved and i have found a test to do after the dough has rested to make sure it’s not too dry. I even have the laying them into the pan down. I did get one to puff nicely using a 2 pan method where the first pan (non stick ) is in between med and med/high and a second cast iron pan at med/high.

Why am I having such a hard time with consistency? Sometimes I have to waste the entire badge and start again because I can't Seem to get it to absorb the water and come off of my hands, And turn into a ball. Even though I'm adding water a little at a time, it just seems to turn into. A muddy mess and I have to start over. Any advice is appreciated.
So sorry your having trouble, try following my recipe for water amount, I tried my best to explain the steps. For your Maseca, you might use a little less or a little more water than i did (depends how tight you packed the measuring cup with Maseca)...make sure the texture is like Play-Doh (damp and soft) and KNEAD WELL. If too dry, you can add a little more water a Tbls at a time, or if it's too dry, you can add a little more Maseca a pinch at a time. Please don't give up, I know you can do it my friend.❤️

I absolutely love watching your videos! I feel like I’m in the kitchen with you and you’re explaining things as we go along! I always like to keep corn and flour tortillas in the house but I end up throwing away more than I eat because it’s just me. So I decided to just make my own.
