Cooking a whole lamb in the asado style (al asador) is a real art of butchery and heat control, Tom Bray of Country Fire Kitchen has been running asado masterclasses in Somerset, passing these skills on to many people keen to learn them.
I recently spent a day with Tom on one of his asado masterclasses, and did a bit of filming to give an idea of what you cook and learn.
This is just a snippet of the amount of knowledge that was passed on to the students, and if you wish to learn about this yourself, then you should look to attending one of his classes.

@@CountryWoodSmoke am glad to hear that. It's also becoming popular here in Australia, where I live. Alongside the American style of BBQ smoking. Btw, I also run asado classes here. So I was interested to see how Tom ran his. Looks like you all enjoyed an authentic Argentine feast

What’s the best wood to use for an asado like that? Oak? Cherry? Curious about your recommendations.

Thank you for the video. How much firewood do you add to have the right temperature? And if I want to use oak and (apple for flavoring) what is the wight ratio for each one?
