I could never sleep in that kind of bed. I'm allergic to pollen. The matrass and pillow is terrible for me.(and the neighbours because I sneeze all night long.)
Pollen comes from flowers, that's hay which is dried wheat. The "flower" (for lack of a better word) of wheat is the very seed head that's cut off and the seeds processed into flour. What he used to make the mattress was the stalk and there aren't any flowers on that, so there's no pollen.
