I do have a question though and I hope you read this and reply before I start on this canning venture. Do you have a Asian version recipe of this recipe? I'm thinking about trying it but I'll be using ginger, various peppers, Szechuan peppercorns (green or red prickly ash is the real name), fish sauce, sweet soy sauce and/or molasses, fresh basil, and maybe fresh lime juice. I'll be also using some of the items in your recipe. Any ideas you can help me with? What are your thoughts? Thanks a bunch!!
An easier way to remove the seeds is to simply add cold water to the pot Itself and the seeds will fall to the bottom of the pot at which time you can get rid of them or dry them for planting next year
I love cowboy candy, every house should have some☺️ only thing I do differently is I put them in the processer and pulse theme a couple times.. it makes easier to spread on chicken, sandwiches or have it w cheese and crackers and on top of cream cheese. I save my brine for beef jerky mmmm
The sharper the knife, the less irritation. Same with onions. With those slicers, it crushes the pepper a bit, because they’re aren’t sharp, which makes more juices exposed to the air.
Like peaches and tomatoes, I wash, put in water and as they get just hot put in cold and the potato skins slip right off. Diced, or small whole ones, pack in sterilized jars and process. I only added salt, covered with water. They are so handy but I haven’t tried mashed.
Have you made cowboy candy pickled quail eggs yet? I make the cowboy candy but I need a good recipe for pickled eggs! I’m going to try it for the first time. 😊. I love the cowboy candy so I’m hoping to replicate it somehow! 😂

I usually do jalapeno jelly for Christmas . I was planning on doing cowboy candy for the first time this year. I am going to add some of our sweet peppers for color. I'm so excited to do these !!!!
What do you use the left of brine for ? Or do you can and save for later batches ? Love cowboy Candy made it for the first time last year super yummy on so many things 😋
You said you doubled the recipe because you had a lot of peppers. Are the amounts you showed in your video the double recipe amounts or is that the amount for a standard, single recipe?

I may need to half the recipe bc I don’t have an absolute ton of jalapeños, but I really want to utilize my jalapeños - I feel like I wasted the last bunch I picked, bc I fermented them for hot sauce and they ended up yucky, slimy, unsure what went wrong 😢. I recently made my first batch w/o salt and thought it was good. Then, I saw another recipe using salt, so I added it to my second batch. DEFINITELY adding salt from now on!

@connecticutwormsgardens just a good punch or so. You actually don't want to taste the salt. But, you'll know when it's enough. The recipe will taste "right."
I love cowboy candy and consider it a comfort food. I know I am twisted for saying that but hey I am from the south and grew up with peppers as a side dish.
I made that several weeks ago. I coughed my head off. I'm highly allergic to the oils and first tine I made jalapeño jelly, I swelled up like a blowfish so I have to be so careful. I did wear gloves, but my hands burned for hours after I finished. I even used lemon juice then a paste of baking soda to cut the burn to no avail!! I see you use tatters. I ran upon 3 dozen brand new at Salvation Army store a while back. 1.99 a dozen. Ive never used. So I see from your jars you put the rubber ring, then the white cap, then a regular jar ring to process? I have not used yet, are they good?
I really enjoy Tattler lids and for the most part have much success with them. Every once in a while I’ll get one that does not seal 🙁 it’s always disappointing when that happens. Definitely look up the directions on how to use Tattler lids because it is different from regular lids. A bit of a learning curve but well worth it! 😀

Please visit someone who is also blessed by God, but in the field of medicine. Your symptoms are serious, not just the normal reaction to capsaicin. And who knows what else you might breathe or touch. Allergies can develop over time. Mine did. I pray that He will give you a Gifted, Faith-filled Allergist. You should be tested for other allergies, and treated for this one. I'm not overreacting- I speak from experience. God saved me! He sent me, in an ambulance, to one of His doctors! Go, dear one, go!
