It's amazing. We call that kind of beef stew "mechado" here in the Philippines with the addition of soy sauce, bay leaves, mushrooms, chorizo bilbao, crushed pepper, a dash of brown sugar and local lemon. Thinking about getting my own dutch oven too.
just made this is a cast iron pot I cleaned and reseasoned, added a couple more spices, but turned out great, and was my first time using cast iron,I like it, thank you
I made this at home with a regular stainless steel pot. It turned out delicious. I can only imagine how much better it is in a Dutch oven. I used purple,white,orange and yellow carrots. I used sirloin petite steaks instead. And I added a bag of corn. It did take longer and I had to stir it more to make sure everything was cooked. Next time I'm gonna use the crockpot. I'm sure the neighbor's would probably complain if I had a fire going all day.
I watched this while eating my own beef stew lol Mine had peas, baby potatoes (whole), onions, carrots, and a small bit of sriracha stirred in at the end for a little spice. Was very good along with fresh biscuits. Thanks for sharing!
Sauté onions in that butter first. Carmelized onions add amazing flavor. Add beef and brown. Add water and let that stew. Add veggies at end so not mushy.

Add also some celery, mushrooms, some cracked black pepper and a dash of Worstcestershire sauce. Will be the next level up!! Good looking stew as is though.
Aye ^_^ carrots, celery, and onions are the go to for any soups and stews! The french have a word for those 3 things always going together, but I can't even remember what it's called right now LOL!
celery is magic. add it to almost any soup, stew, casserole, etc. you only would need a stalk or so. but yes worcestershire and mushrooms too. The best meat I ever had with a stew like this in the bush was moose and or bear meat.
An easier way to maximize the thickening power of 2 Tbsp of flour would be to coat the meat in flour and brown in the butter...then deglaze with any liquid then cook veggies. I don't like to nit pick but it takes more work to add butter fat later to flour.....still looks awesome..... I like your vids...keep it up.
Looked good brother. When I make stew I dredge the meat in flour before browning it then I don't need to add flour to make the roux. Thanks for sharing.
Nice. The tomatoes gave me kind of a twist as well. Though in the long run, the part leading up gave me some new ideas for my next batch of chili, hehe.

I'd add some worstcershire sauce and a bit of chili powder. You could also use some salsa instead of tomatoes or tomatoes with chil's.....Here in Texas we like to spice it up a bit. Beef broth and a few swigs of beer also give a great flavor.
Delicious. I make that about once a month with one minor difference: I like to brown the meat until it's dark brown and starting to crust. Just a personal preference but you might want to try it sometime. Sometimes I add chipotles to boost the smokiness.

NICE! Can you ship by Purolator? Haha! The only thing I would mention is that when I cook mine, I seer the beef cubes in batches, so they get a nice caramelised crust.... Your stew looks really good!
I love the cowboy stew. Yours looks great! I make it a little different we put beans and chopped chilies in ours. Great way to add some smoke is throw in some smoked chilies or andouille sausage instead of beef.
I just decided to buy that rusty 14 qt camp dutch oven at the re-sale shop after watching this. Great job. Think about finishing it off with a Bisquick mix crust maybe. Stew pot pie!
You forgot the most important step!!! About 30 minutes before they're done make dumplings from a combination of 2-to-1 ratio of flour and suet (e.g. Atora), using a little water, salt, and a tsp of baking powder if you like. Mash into a dough, split into 4 large dumplings, place on top of stew and let them look until they swollen.

Ha, ha, haaaa, I don't believe that early cowboys there in the USA have had fresh tomatoes all the time, but I enjoy your commitment for tasty foods, like a good hungarian gulyás (gulash), what it seems to me. A bit of fresh bellpepper and fresh cold sour cream could add some extra flavour to your beautiful dish. Bon appetite. LOL
I am not sure why garlic was only added when it was all wet. In most Asian cooking, we lightly fry them to bring out the flavours as a pre-cursor to searing your beef or frying anything.
Yea.. Just remember not to burn them, you can start with some oil or butter together with the garlic so that it becomes a sorta golden brownish colour...
If you dice the onion even more and you toss it in first then you do not need to add any flour (in case your gluten intolerant) and instead of liquid smoke just add a fine red wine about a full glass, it still will be a great stew ! nice job btw.
