Recipe for 6 ramekins with approximately 108 grams each.
Whole milk: 250 grams,
Heavy cream 35% fat: 250 grams,
Granulated sugar: 150 grams,
Egg yolks: 8 units,
Vanilla extract: 1 teaspoon.
For the topping:
Granulated sugar: 100 grams.
Oven: In a water bath, 110°C (230°F) for approximately 1 hour, until the mixture starts to set in the center.
