This week, we are distilling melons and making phenomenal brandy. When Melissa happened upon some amazing melons at the Songtan market, we knew after the first taste that we would be making Melon Brandy. The galia melon offers a delicious sweetness similar to the honeydew melon, and it makes a deliciously flavorful brandy.
This ends up being the most expensive of the alcohols we have distilled, but it is also one of our favorites.
Please note this video began back in November so Galia melons may not be in season when you are viewing it.

alright, now I'm going to have to run some melons. You might look into using Glycerin to drop some of that sharpness. It will help smooth it out. I can't remember the ratio but you can find it online.

I always seem to have trouble with melons in general. They all seem to have relatable flavors to cucumber. And the cucumber taste always seems to strengthen and the sweet flavors go away with fermentation. But I’ve never distilled it though….

Pretty sure we used the thump keg when running to keep some of those fabulous melon flavors. And Olive Nation has some great extracts that can bump flavors a bit if you need it. If we hadn't been able to fix the flavor, I planned on checking there for a bit of help. If Watermelon was not so ridiculously priced here in Korea, we would definitely give it a try.

So did you do a first run and a proofing run or just rely on the thumper? Wanting to do something similar with cantaloupe.

@@ScottCoppess So, this was literally three runs. We did an initial run which turned out great just using the thumper. Then, we did another mash in and run with thumper but we mixed run 1 and 2 without tasting first. (Rookie mistake). This gave it an off flavor, so we then ran the combined liquor one more time with the thumper to fix the run. We find brandies do relatively well with just the thumper.

@@kimchirednecks Thanks. I'm running a straight copper pot still so I tend to run an initial flavor run and then proof it up on a second run.
