CRAZY VEGAN BRISKET RECIPE | the best vegan meat!

In this recipe I demonstrate how to make a crazy delicious vegan brisket!😋 The cooking is a long wait but it's well worth it! Instead of doing the boiling of the vegan meat which is customary with seitan (vital wheat gluten), I just maintain the moisture and do it all in the oven. You will see how I time things out so that I can get the other components of the meal all cooked. The trusty oven timer comes in handy. The jackfruit and tofu components change the regular texture of the seitan. This is the best vegan meat! I hope you have fun making it and eating it.
I also include how I make the rest of the stuff too. 😉
Below is everything you need.
Brisket:
Oil for cooking
1/2 Yellow Onion
5-6 Garlic Cloves
A couple handfuls Cremini Mushrooms
1/2 Cup Veggie Stock
1/2 Cup Carbonated Water
---
2 Cups Vital Wheat Gluten Flour
1 Can Jackfruit (drained)
1/2 Block Tofu
1 Tsp Cumin
3 Tsp Italian Seasoning
1 Tsp Dried Thyme
1-2 Tsp Smoked Paprika
1 Tsp Ground Ginger
Black Pepper & Salt to taste

2 Tbsp Liquid Smoke
2 Tbsp Soy Sauce
1 Tbsp Maple Syrup
Gochujang Sauce (a mildly spicy and sweet Korean sauce)
1-2 Tsp Miso Paste (for that umami flavour)

Veggie Stock
BBQ Sauce
(You will need a fair amount of both to keep the veggie meat moist)
1/2 Cup of Red Wine
Large Pan & Dutch Oven
The cook time is a total of 3 hours. You can get everything prepared one day and allow it to marinate if you wish.
Remember knead the seitan for 5 minutes and let it rest for 10 minutes

Baked Potatoes:
Yukon Gold Potatoes (or potatoes of choice)
A small amount of oil to coat the outside
Salt and Pepper to coat
Baking Sheet & Parchment Paper

Maple Glazed Carrots:
Carrots - A couple handfuls
Oil of choice
Salt and Pepper
Greek spice blend (I got mine at Fresh City - Bay & Gerrard)
Maple Syrup
Same baking sheet and parchment paper - just spaced apart

Rapini:
Rapini - A couple handfuls
Oil
Garlic - 4-5 Cloves
1/4 Cup Lemon Juice
Chilli Flakes
Vegan Feta Cubes (I used the Plant Ahead brand)
Medium Pot
Bowl of Ice Water
Medium Pan
Blanching the Rapini takes away the strong bitterness which some people are more sensitive to.

Remember, you can always make adjustments to suit your taste and increase or decrease quantities. The great thing about this vegan brisket is that if you have leftovers there are many great things you can do with it rather than simply reheating it.
