Cream Cheese Bun 奶油乳酪麵包|Apron
溫鮮奶 lukewarm milk 150ml+-
即溶酵母 instant yeast 5g / 1/2Tbsp
全蛋 whole egg 1 (50g+- per egg)
奶油乳酪 cream cheese 50g / 1/4cup
高筋面粉 bread flour 300g / 2,1/8cup
细砂糖 caster sugar 30g / 1/8cup
海鹽 sea salt 2.5g / 1/2tsp
陶盤 oven dish 28x6x20cm
摄氏180 / 华氏356 烘烤 12-15分钟
Bake at 180°C / 356°F for 12-15minutes

谢谢Apron分享!我自己学着做的时候看了好几遍视频,觉得有文字描述会方便些,就整理了一下。供大家参考。 1. 溫鮮奶 lukewarm milk 150ml+ 加上 即溶酵母 instant yeast 5g / 1/2Tbsp 放置5分钟,激活酵母。奶用温鲜奶,不要太凉也不要太热,太凉会让酵母活性变低,太热把酵母烫死了。 2. 然后加 全蛋 whole egg 1 (50g+- per egg) 奶油乳酪 cream cheese 50g / 1/4cup 高筋面粉 bread flour 300g / 2,1/8cup 细砂糖 caster sugar 30g / 1/8cup 海鹽 sea salt 2.5g / 1/2tsp 厨师机开2档揉面10-15分钟 和好的面团放在容器里,盖上盖子(视频里是盖了盖子)或者湿布,静置一个小时或者等到面团变成一开始的两倍大 3. 案板上放一些面粉防粘。把面团拿出来,用指压的方式把面团压扁,压成圆形(视频里Apron压得很园,赞!我压成了近似长方形,反正也能分割) 分成小份(视频里分了十二份),然后用向内折叠的方法做成小面球。 盖上布,让面球静置15分钟 我觉得Apron处理面团的手法很赞,这里可能多看几遍学习手法。 4. 烤盘里垫上烤纸。 醒好的面团小球先用指头压扁,然后用向内叠的方式,再做成面球。 把面球放在烤盘里,盖上湿布。静置一个小时或者等到面团变成一开始的两倍大。 筛上一些面粉(感觉是装饰用) 5. 摄氏180度,华式356度,烤12到15分钟。

Hi Apron. We just had these for dinner. I made some changes to the recipe which I'm including here. I don't have egg, so replaced with a full tablespoon of thick curd. I added only half the yeast as I cold fermented the dough in the frig for 24 hours. In the final rolling of the buns I added a teaspoon of cheddar cream cheese as a filling. I brushed with milk before baking. My family hardly touched anything for dinner, feasting on these super soft buns. Many, many thanks.

This recipe turned out so well. I didn't use cream cheese but opted for goat cheese and butter. A ratio of approx 35g goat cheese and 15g butter. They still turned out perfect. Will definitely be making them again.

This was an excellent recipe. I used 100ml of milk though, and I only had 200g of plain flour, so I topped up with cake flour and milk powder. Very fluffy, soft and delicious. Love this recipe. Thank you!

Hi Apron, how are you doing? I made the cream cheese bun today, the bread is so fluffy , soft and chewy. I shared all bread with my neighbours and friends, they all lovo it. My friend's kids told me that he wants to have it every day.:) it is a fun to learn baking from you during the long weekend during the pandemic. May I ask you a question? If I want to make 18pcs or 24pcs in a bigger size pan , do I need to adjust the backing time and temprerture? Thanks for your reply. 我是一个完全没做过面包的新手,昨天尝试了温莎面包和紫薯面包都很成功,今天继续尝试奶油奶酪面包,特别成功,面包表皮有了很大改进。面团是非常稀,换盆时满手稀烂面团,我真的很怀疑是否自己看错了配方,但是一小时发酵后奇迹出现了,面团有了筋性后可以成团了。朋友们别再担心面太稀呀,会成功的。再次感谢Apron的配方和视频,你的面包不但好吃而且外形特别漂亮,遗憾这里不能和你分享图片和视频。

Could I use regular granulated sugar instead of caster ? Update: I used regular all purpose flour and granulated sugar & it turned out amazing ! Update: I tried remaking it again but with a 1/2 cup of sugar.... but it did not rise and it was more dense. I’ll try to add more milk next time to experience

I made these buns for the first time today and my family absolutely loved it! For the lukewarm milk, I didn't have a thermometer so I microwaved cold milk for 30 seconds!

I tried this recipe, my bread turned out very nicely. I didn't use any equipments for kneading just mixed all ingredients with spatula and cover it with tea towel, leave it for an hour and bake...thanks for the recipe buddy 🥰👍🤗💐

I-love the way you handle the dough... using the mixer at the first stage rather than your hands is cool... I love the clean work top and overall surroundings. And the reason for the soft bread... less flour while kneading the dough. Excellent

@apron I like your videos very much! The loving and careful way you treat the ingredients / dough, no music, no fancy ingredients or lots of cheese and chocolate ... adorable! As far as I've seen you alway use instant yeast. Instant yeast doesn't like me ... :-( ... I guess it's no problem using fresh yeast instead, or is it? I'll definitely try these buns on the weekend.
