This is a recipe for cookie sandwiches, which is rare cheesecake sandwiched between cookies.
I added strawberry-flavored chocolate to make a cute heart shape.
I substituted cream cheese for eggs in the cookies. The dough holds together easily and makes a very tasty cookie.
▷Ingredients (for 15-20 cookie sandwich)
■Cream cheese cookies
100 g unsalted butter
20 g cream cheese
50 g powdered sugar
Pinch of salt
1 tsp vanilla extract
180 g cake flour
30 g ground almond
powdered sugar
45 g strawberry chocolate
▷How to make
1. Bring unsalted butter and cream cheese to room temperature and knead until soft.
Add the powdered sugar and salt. Add the vanilla extract.
3. Sift in cake flour and ground almond and mix until powdery.
4. Wrap the dough in plastic wrap and roll out to a thickness of 3 mm. Refrigerate for 1 hour.
5. Cut the chilled dough into 58 mm dia. molds. You can get about 30-40 cookies including the second dough. Cut out half of the cookies with a heart-shaped mold, about 30 mm wide and 28 mm long, in the center. If the cookie dough becomes soft, refrigerate until firm.
6. Bake in a preheated oven at 170℃ for 8 to 12 minutes.
7. Sprinkle the heart-shaped cookies with powdered sugar, if desired.
8. Melt the strawberry chocolate and put it in the center of the heart-shaped cookies and refrigerate until hardened.
■Strawberry Cheese Cream
180 g cream cheese
180 g strawberry chocolate
2 teaspoons lemon juice
▷How to make
1. Melt the strawberry chocolate in a pan of simmering water.
2. Knead the cream cheese until smooth, add the strawberry chocolate and mix.
Add lemon juice and mix until blended. Place the bottom of the bowl over ice water to bring the temperature down to about 20℃.
4. Put the mixture into a squeeze bag fitted with a round tip and squeeze generously over the cooled cookies. (about 20g)
5. Place between cookies and refrigerate until firm.
