A few weeks ago, my friends over at @TabiEats reviewed autumn foods from their local convenience store in Tokyo. One of the choices was a pumpkin gratin that Satoshi described as predictable but not terrible. As he described what the components were, I was inspired to create this dish. And much like my friends Shinichi and Satoshi, this creation is fabulous!
Penne pasta in a creamy pumpkin sauce, layered with roasted herby kabocha and shredded Fontina cheese, and topped with panko, then baked to bubbly goodness. This creation has quickly won my heart and is definitely getting made often all season long.
Shinichi and Satoshi, thank you so much for inspiring this video! I hope everyone gets to enjoy this recipe as much as I do.
