Pizza dough is just for pizza, right? I certainly would have thought so, until I witnessed how Eva uses it.
Inevitably when Eva makes pizza at home, there's always some leftover dough-that's when the creativity kicks in! Turns out that pizza dough can be used to make an almost infinite number of tasty treats besides pizza, using just about anything you happen to have in the fridge or pantry. The options are so limitless, that I've never had the same thing twice!
In today's video, Eva's sharing the basic techniques for repurposing pizza dough so that you can improvise at home and come up with your own delicious creations. All she has to work with is a big batch of dough and whatever happens to be in the fridge...

You did before a pizza in teglia stuffed style Sweet dessert pizza filling? Use Nutella/Reese's (not a huge peanut fan so hard to say)and some other American favorites by Eva?

When I was alittle boy, I'd get a ball of dough about an inch or so, and throw it against the sliding glass door to make it stick. My mother didn't like that.

My Italian Mother would fry it in olive oil and salt it. We ate “pizza freetz” with soups, salads, or made an open faced or closed sandwich with them. Or, create another type of pizza with them. DELICIOUS 😋

When I was growing up we did pizza freetz on Fridays! After the dough fried we put on sauce and (LOTS) of grated cheese or powdered sugar for sweet ones!

Had my first pizza freet at the New York State Fair. They were served hot with sugar and cinnamon. I had to buy two because one would never make it to where I parked my car.

I make pizza all the time - my garden was exceptional this year with over abundance of tomatoes and eggplants. I made an eggplant, ricotta & mozzarella pizza YUM

Its natural for most of us to know a few of our heritage dishes, but I'm always amazed by the cooking skills of Eva. Where the heck did she learn such a vast amount of excellent cooking? Your channel deserves 1M subs, just for authenticity alone.

The 2nd most common use for this dough in my house is Medfouna. It's Moroccan and is like a calzone that has olive oil and a lot of parsley inside. We use ground lamb, carrot, and Mozzarella inside, too. What makes it popular in my house is the spices, since it's the only time I use caraway seeds!

It is already my favorite cookbook, and can easily stand on its own next to the other Italian cooks, and their cookbooks! WELL DONE!!! I am already looking forward to your NEXT book! 😊 Growing up in a Italian household where my great grandmother and grandparents cooked traditional meals, it’s nice to have a reference where I recreate some of those memories again. In Italy we prepare something similar with puff pastry but instead of feta cheese we add ricotta to the spinach, next time I'll try with pizza dough.

Can't wait to get my book! I make pizza every Saturday night, and I used a pizza steel for the first time last night. LOVED it. I like to make pretzels, stromboli, and cinnamon rolls from leftover pizza dough.

The pizza muffins brought back a childhood memory. My mother was single and struggling to keep her three kids fed, housed, and going to good schools.We ate plain but decently healthy meals, but every now and then she'd make us English Muffin pizzas. Just a spoonful of spaghetti sauce from a jar and a bit of Mozzarella cheese under the broiler for a few minutes. Kid me thought they were awesome, and I still do because your mother's food made with love will always be better than anyone else's (except Nonna, of course.)

Roll out the dough - brush with butter and press grated cheese and seeds (sesame, pumpkin, sunflower, whatever you have handy) onto the top of the dough. Season with your favorite herbs. Cut the embellished dough into strips and bake in a hot oven. You can make them fancy by twisting the dough. Same process works for crushed nuts with cinnamon sugar for a sweet treat.

Just received confirmation that your cookbook will be delivered on Tuesday and I am so excited!!! Always saved a bit of leftover pizza dough for simple fried dough refridgerated overnight, roughly torn and left to rise then fried in olive oil for breakfast with butter and salt the next day. The kids loved it!

That thing she’s making in the muffin pan.. I do that with flaky layers biscuits.. I peel them apart, stuff with whatever, pinch them to balls and put them in the muffin pan to cook.

You can have a complete meal! Starting with a nice soup with the dough bread than you can have a savory stuffed dough with a salad with croutons made out of dough and going over to a sweet desert made out of the same dough lika a blue berry muffin Buon Appetito

I live in Florida, and love Cuban Sandwiches. I had leftover Mojo pork, and everything else I needed, but the local Cuban bakery was sold out of Cuban bread. Luckily for me I had leftover pizza dough in the fridge. So I rolled out eight inch rounds of dough slathered on yellow mustard, added sliced dill pickles, Virginia ham, shredded Mojo pork, and Swiss cheese. Folded over and crimped with a fork, then brushed with melted pork fat. Twenty minutes later in to the oven at 400f for a little over 15 minutes. Cuban pizza dough empanadas were born. Delicious, I make them every time I have leftover Mojo pork.

Potica, a Slovenian nut roll that is common in many countries: Germany, Poland, Croatia, Serbias and Northern Italy. It's often a dessert or breakfast item around Christmas and Easter. The rolls can also be filled with a poppy seed filling as in Ukraine. Enjoy!

Pizza dough makes great Pita Bread. Make a ball, roll it into a circle. Place on your pizza stone with the oven at 500-550 degrees F or pizza oven. Watch it puff up in just a couple minutes. Ready when it is lightly browned.

When I make “Neapolitan style” dough, I use it for small loaves of bread or rolls and it’s great. Nice big holes, crusty exterior. I bake a lot and have made tons of bread dough and when I tell people about how versatile this or that dough is, they’re always so shocked. It’s just dough. The only variation is hydration usually unless you’re talking about a sweet dough or a highly enriched dough like brioche, but even then… all very versatile. Edit: so excited for your cookbook!

I wish I had one right now. I think you could stuff about anything in that dough and it would be delicious. Like sandwich things. For the fruit content you can take a jam and add these fresh berries just so that they stick. Now you can put this mass into the dough. You could even added blue poppy seeds and/or broken nuts. For the Cinnamon roll you first mix the cinnamon into the sugar and then sprinkle over the dough. If not then you use a tea strainer (sieve) to spread the cinnamon evenly. For that filling I recommend to use the dark brown caster sugar, cinnamon and some glucose syrup to let it just stick together. And add this mass on the dough. For the dough you could have used butter when making it. Of course no olive oil but butter. This makes it more delicious and it lubricates the gluten. Which it loves!

When I do make pizza, I make extra to do some garlic knots. Or you could also use leftover dough for a stromboli or calzones.

I can't wait for your book to arrive! I have been making fresh bread every other day using just flour, yeast, salt and water. I use the "no knead" method, folding the dough on itself four times, every half hour for two hours. Then it's baked in a Dutch oven. Its a marvelous round loaf. I just hate American store bought bread with all it's preservatives and corn syrup!

I thought the difference between a muffin and a cupcake is the crumb. Muffins have a bread-y crumb, while cupcakes have a short, cake-like crumb.

It is. In today's world of factory everything, it is very likely that Harper has never had a proper muffin. Most items sold as muffins in stores are cupcakes called muffins. Sometimes, but rarely, they are slightly less sweet.

Cupcakes are made from a batter (like cake), muffins are a quick bread. These are more like rolls, which use yeast dough and need to rise.

In Portugal they have something similar to the dough you guys made with schiacciata Calabrese ! It's called "Pão com chouriço" (chorizo bread). A dough topped with olive oil, Portuguese chorizo (smoked unlike the Spanish one), cow/sheep cheese, and then they roll it and bake !

I always make a 12~24 hour fermented pizza dough at home and use it for the next 3~4 days. I usually make pizza, but I also like making mortazza or whatever sandwich with ingredients I have, some sort of baguette and even stuffed chocolate balls. Pizza dough is extremely versatile.

Myself when we make pizza dough we make panzarotti….fried dough with sugo and parmesan cheese as it comes out hot!! Also we make fied dough balls with sugar. Delicious 🥂🧑‍🍳🍺💥💥💥

I’m with Eva…..mortadella……just came back from 3 weeks in Italy and I am missing the delicious mortadella. I grew up eating it as I’m full blood Italian but born in Australia and even though we can get mortadella here, the one in Italy was absolutely amazing. Love this video, will definitely try some of these with my left over pizza dough. My mum always rolled them into thick cigar shapes and deep fried them and then some she salted and some she put sugar on top….all delicious 🥰🥰

My mom would make pizza fritta, frying the dough and we would eat it with butter or powdered sugar. Delish!!

I just got your book yesterday and I LOVE IT! I can't wait to make ALL THE THINGS! LOL The pizza dough is going to be one of the first things I make because carbs are life! Thank you so much for writing this book and having such an awesome channel! I love learning the original Calabrian recipes that my Nonna would make. Obviously, there were changes because some stuff was very hard to find (some still are tbh) But now I can make the Calabrian version and rate it vs my Nonna's recipes. You guys are up against some pretty stiff competition! But I am sure I will love every recipe I try, it just might not be AS good as Nonna's. ;-)
