I just made one of these for a church potluck. I also like to substitute the regular cream cheese for strawberry cream cheese sometimes. Also throw some sliced almonds on top before you bake it, so good. ❤

My Mom's version of this recipe uses powdered sugar. It mixes into the cream cheese easier. Also, add one (or two - your choice) egg(s). It makes the filling easier to spread; and, makes it taste richer. You can also add fruit into it. I love to stir in blackberries.

I have made this a few times. But I call it sopapilla cheesecake. That’s what it was called when a girl at work gave me the recipe. It’s sooo delicious and so easy!

Since I watched this, I made it for family when they had their first baby. My 19 yr old grandson absolutely loved it and almost demanded that I make it for our Easter dinner on Palm Sunday, so I did. Thank you!!
