Beguni or begun'er chop is one of the most popular "telebhaja" (fried in oil) dishes all over Bengal and many parts of eastern India. Beguni is served as a snack in the evenings with tea. It is also popular as a side with dal-torkari-rice or khichuri. Beguni may be a simple recipe but creating muchmuch-e (crispy) beguni everytime requires an understanding of various factors that go into making the beguni crisp. In this video, we show our personal favourite way of making the batter using besan (gram flour) and rice flour. The proportion between the besan and rice flour in the batter makes a lot of difference in the final product. Also important is the ratio of water to the dry ingredients. As always, we recommend weighing your ingredients to be able to confidently produce a perfect batter every time. In fact, this batter recipe will work for any other kind of besan-based telebhaja too. So, it is a great recipe to commit to memory should a telebhaja emergency ever arise!

প্রায় 4 মিনিটের রেসিপি টা আমার দেখতে 10মিনিট লাগলো। কিছু কিছু জায়েগা বার বার repeat e দেখেছি। সত্যি অনবদ্য presentation । আর বেগুনির রেসিপি টা এর আগে কখনো এইভাবে কেউ শেখাইনি । hats off to the team ..💕

Very easy and simple. On mom’ advice I always add jowan (ajwain seeds) to any batter.. it helps with digestion if people are prone to acidity and other stomach ailments

This is the first recipe I watched accidentally from bong eats...and literally fell in love with the channel. I don't clearly remember the number of subscribers then...may be near about 100k, but within one year... what a bang! This is what called class!

I made this today alongside another recipe of yours "Maach'r maatha diye moong dal" and i absolutely loved the results for both dishes! As a probabashi, I truly miss my grandma's food, and this certainly brought me closer to those memories and emotions I'd felt when I'm with family! OMG!!!!! This is a real discovery. Thank you so much. I was missing having beguni post moving out of Kolkata and didn't have the courage to make it myself for fear of ruining it. This tutorial gives me confidence to prepare and so much joy that I'll be able to eat this again.

গেল রমজানে রেসেপিটা জানলে ভাল হতো..... আমি চিনি কখনো দেইনি। আর বেগুন পানিতে ধুয়ে নিতাম। সয়াবিন তেলে ভাজতাম। বেশিক্ষণ মচমচা থাকতো না। ভাল রেসেপি জানলাম। ট্রাই করবো। চট্টগ্রাম থেকে ভালবাসা রইলো।

hello, I love your concept. My mom adds a little corn-flour too and ada lonka bata to the batter, it tastes amazing. You can try it! also she makes it tomato , she cuts it from the sides and when the fry is finished the tomato is soft and gooye from the inside. let me know if you try it.
