HOMEMADE potato chips??? Yes please!
I find it so annoying to buy a bag of nice chips for $5 (at least) and find that most of it is just air with chips I finish in 10 min. So next time you have guests over, impress them with your own home made potato chips!
1- Prep: peel potatoes, and slice them thinly with a mandoline or a food processor. Immediately cover with ice-cold water for 30 minutes. This would prevent browning and will help get them crispier too!
* Keep different kinds of potatoes separate as they will cook at different speeds (unlike in the video)
2- After 30 minutes spread the chips on a paper towel and dry as best you can - do it in batches- this is a very important step!
3- Prepare a large pot or pan with very high edges, and heat up frying oil )no- not olive oil) at about 3 inch high. Get the oil to very high temp around 300-350º. IF you don’t have a thermometer, drop a chip - it should sizzle immediately.
4- Fry chips in batches and keep on pushing down with your slotted spoon to help them curl and looking amazing. When done, place them on a baking sheet covered with a paper towel. MAKE SURE IT’S IN A SINGLE LAYER!!! otherwise your chips will get soggy.
5- Salt immediately and add to your bowl. with each batch add your favorite seasoning if you choose to, and serve immediately.
