►Ingredients
►Chicken Wings
►Brining Chicken
1kg or 2.2lbs whole chicken wings
2 tsp salt
2 tsp black pepper
1/2 cup hot sauce (Tabasco)
►For the Dredge
2 cups (300g) plain flour
2 tsp mustard powder
2 tsp celery
1 tbsp garlic
2 tsp onion
2 tsp white pepper
1 tbsp black pepper
1 tbsp paprika
1 tbsp cayenne pepper
2 tsp msg
2 tsp oregano
1 tsp thyme
1 tbsp salt
►For the Wet Batter
2 large eggs
2 tsp salt
2 tsp black pepper
1 cup soda water
1 cup (150g) plain flour
Also, 1 cup flour in another bowl
►For Frying
1 litre any neutral oil
►For the Sauce
700ml water or light chicken stock
5 - 6 large red chilies (use habanero or birds eye for more heat)
3 garlic cloves
1 small onion
1/2 cup pickle juice (or use vinegar to your taste)
1 tsp chipotle paste
2 tsp light soy sauce
2 - 3 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp msg
Salt to taste
2 tsp sugar
Serve with coleslaw (recipe on the channel) and fries.
