Fried winter melon meatballs are a delicious dish that is crispy on the outside and tender on the inside.
The fragrance of winter melon is combined with the deliciousness of meat filling.

Material preparation
Winter melon: 300g (peeled and chopped)
Pork filling: 200 grams (you can choose lean meat or fat and lean meat)
Onions: appropriate amount (chopped finely)
Ginger: appropriate amount (minced)
Salt: appropriate amount
Black pepper: appropriate amount
Light soy sauce: 1 tablespoon
Starch: 2 tablespoons (can use cornstarch or potato starch)
Egg: 1 (optional)
Bread crumbs: appropriate amount (for coating the outer layer)
Oil: appropriate amount (for frying)
Production steps
Process the winter melon:
Peel and chop the winter melon, soak it in water for 5 minutes, and then squeeze out the water with gauze or kitchen towel to ensure that the winter melon filling does not have too much water.
Mix the fillings:
In a large bowl, mix the squeezed winter melon, pork filling, scallions, ginger, salt, black pepper, light soy sauce, starch and eggs (if using) until thick.
Formed meatballs:
Divide the mixed filling into small portions with your hands and roll them into balls, trying to keep the sizes consistent.
Breaded:
Coat each meatball with bread crumbs, making sure the surface is evenly coated to increase the crispiness after frying.
Heat the oil pan:
Pour an appropriate amount of oil into the pan and when the oil is hot (about 170°C) carefully add the meatballs, being careful not to overcrowd them. Fry over medium-low heat until golden brown, turn over and fry evenly.
Remove and drain:
Take out the fried meatballs and place them on a kitchen towel to drain off excess oil.

Fried winter melon meatballs can be paired with condiments such as chili sauce and balsamic vinegar for a better flavor.
Tips
Seasoning: Other seasonings, such as five-spice powder or cooking wine, can be added according to personal taste to increase the flavor.
Frying temperature: Make sure the oil temperature is right to avoid frying or undercooking the inside.
