Masala vadai is a popular South Indian spicy deep-fried street food made of chana dal. The chana dal are soaked first, then blended with various spices and mixed with onions, green chilies and herbs. The key to having a crispy vadai is to have some whole dal in it which can be attained by blending the chana dal into a coarse paste. Enjoy these crispy vadai with a cup of tea!

1 cup Chana dal/ Kadalai paruppu
2 Dried Red Chilies
3 Green Chilies
1 inch Ginger
5 cloves Garlic
1 tsp Fennel seeds
1/4 tsp Cinnamon powder
1 Big onion (finely chopped)
1 stick Curry leaves (chopped)
1/2 cup Coriander leaves (chopped)
1/2 tsp Salt to taste
A pinch Hing
