Ingredients for 16 balls:
* Mixture of flour:
2/3 cup + 2 Tbsp = 116 gr All purpose flour
1 small tub vanilla sugar
1/2 tsp = 2 gr double acting baking powder.
1 Tbsp = 8 gr rice flour
2 Tbsp = 16 gr tapioca starch
* Egg mixture:
1 egg
1 Tbsp = 12 gr vegetable oil
2 Tbsp = 28 gr water
1/4 tsp = 1 gr kosher salt
3 Tbsp = 45 gr sugar
1/4 cup = 40 gr sesame seed.
Vegetable oil for frying.
Tiny amount of flour for dusting the work surface.
Powder sugar for dusting (optional)
Oil temperature for first 2 mins should be around 340°F, then increase temp up to Medium fry until it golden brown.
Should have enough oil for the sesame balls to floating freely when fry.
