Chicken Carnitas are outstanding! Carnitas literally means "little meats," and is a dish of Mexican cuisine that originated in the state of Michoacán.
Ingredients:
1 Onion (Sliced)
1-3 Pounds Chicken Thighs
¼ Cup Chicken Stock or Water with Chicken Bouillon/Base
1 Orange (juice)
1½ Tablespoons Lime Juice
1 teaspoon Soy Sauce
1 Tablespoon Brown Sugar
1½ teaspoons Cumin
1 teaspoon Smoked Paprika
1 teaspoon Salt
½ teaspoon Oregano
2 teaspoons Garlic Powder
Cook until tender (3 ½ hours covered on high in Crock Pot).
