Try our version of Carioca using Cassava. I added glutinous rice flour to make chewy on the inside.

Ingredients
Cassava (kamoteng kahoy) - 3/4 kg unpeeled or 750 grams unpeeled or 650 grams peeled or 630 grams grated or 2 1/2 cups grated
10 tbsp glutinous rice flour
Cooking oil for fying
3/4 cup brown sugar for the caramel
Procedure:
1. In a bowl, combine the grated cassava and glutinous rice flour.
2. Shape into balls. Ball size is 1 tbsp.
3. Fry at medium-low heat until golden brown. Transfer the balls into a plate.
4. Make the caramel: Over medium low heat and in the same pan with cooking oil, put the brown sugar. Cook until melted.
5. Add the fried Carioca balls and coat with caramel.
6. Turn off the heat. Transfer the Carioca balls to a plate.
7. Put the Cariocal balls in skewer/bamboo sticks
8. Serve and enjoy!
Pamamaraan:
1. Sa isang malaking mangkok, pagsamahin ang giniling na kamoteng kahoy at glutinous rice flour.
2. Mag-scoop ng isang kutsara at ihulma ng pabilog.
3. Iprito sa medium-low na apoy. Ilagay ang mga Carioca sa plato.
4. Gawin ang caramel: Sa medium-low na apoy at sa parehong kawali na may mantika, ilagay ang asukal. Lutuin hanggang matunaw.
5. Idagdag ang piniritong mga Carioca balls at balutin ng caramel.
6. Patayin ang apoy. Ilagay ang mga Carioca sa plato.
7. Tuhugin ang mga Carioca gamit ang bamboo stik.
8. Kainan na!

This recipe seems better and easier than the glutinous rice carioca. No need to poke the dough balls and hindi naputok.

Hello Josie! Yes, pwede po. Check nyo lang po baka kc piniga na po yan bago i-pack? If ever po wala na syang juice, bawasan nyo n lng or totally remove ang glutinous rice flour. Basta dapat ang final outcome ng dough pwede mo syang bilugin. Thank you.
