Top effort Tim! One trick I use is just before starting the cook, pour boiling water over the fat. Starts the cooking process and opens the score marks. Pat dry with a paper towel Then re-salt and re-oil and away you go!
G'day Roger, Ahh righto mate. Top tip. I might just give that a go on the next one. You cant beat a good crisp crackling. Thanks for your reply mate. Cheers Tim.
G'day Adam, Thats wicked you are getting your first camp oven. Make sure you season it before you cook in it. Haven fun cooking amazing meals in your camp oven. They are fantastic. Thanks for your reply mate. Cheers Tim
G'day Wayne, Spot with that mate. The only limitations on what you can cook in a camp oven is pretty much yourself. Thanks for your reply mate. Cheers Tim.
Gday John, No worries mate, I’m glad you found the video helpful. I hope your cook up goes well on your next trip. Thanks mate for your feedback. Cheers Tim
Loved the tips on how close to the fire to place it and the coals and wood required,, , im a tragic worst cook on the camp oven but im getting better watching your cooking videos, love them and keep them coming , Thanks
G'day Paul, Thats great mate you are finding my camp oven videos helpful with handy tips for your camp oven cooking. Having the right size wood thats not to big, is key for keeping that much needed coal base going. Thanks for your reply mate and feedback. Cheers Tim.
Another Master Chef High Country moment Batesy....you have a whole new career ahead of you !! Mouth watering stuff mate and well done as always !! Very wet underfoot here in Mansfield today with rain showers etc...snow expected tomorrow !! Take care mate !!
Craig Willis Gday Craig, Not sure it’s that good for a High Country Master Chief. Lol I do really enjoy getting the camp oven out mate. We had some good rain over the weekend mate, more coming this weekend as well I think. Thanks heaps for your feedback mate. Cheers Batesy.
Gday mate, That’s wicked this video helped you out with cooking your roast pork for Christmas. I hope it turned out well and tasted amazing. Thanks for your feedback and for dropping in from the UK. Merry Christmas. Cheers Tim.
Looks good I love cooking in my camp ovens but I cook on tables with charcoal so I don't have to bend and stoop in my old age just found you channel and enjoying it keep up the good work
G'day Peter, Yeah mate, give it a crack for sure. Roast pork in the camp oven is gold. Thanks for your reply mate nad feedback. More camp oven cooking videos coming. Cheers Tim.
Ever since I've got back into camp cooking I have followed your roast lamb and chicken cook ups and I'll will be doing the pork roast very soon, and like you Tim mate this will be my first attempt at cooking a pork roast in a camp oven 🤞🤞🤞
G'day Chris, Thats wicked mate. Thats great those couple of camp oven videos have helped you out. I'll look forward to hearing how the roast pork goes in your camp oven. I have a new camp oven cooking tips video coming out soon. Thanks heaps for your feedback mate. Cheers Tim.
BigKev Gday mate, The sand pit was in the place when I moved here a few years ago. No kids using it these days. Lol Thanks a lot for your reply mate. Cheers Tim.
Nice work Tim ... Looked delicious mate ... I also put some half cut onions under the pork on top of the trivet, imparts a sublime roast onion flavour and keeps the pork a wee bit more moist and off the sometimes harsh heat of the coals .... Also a couple of cans of cider poured into the oven can keep the pork nice and moist and stops it drying out ..... If you find the crackling isn't quite as good as you want at the end of cooking, especially if your fire has been a wee bit cooler, you can set alight to a heap of finely chopped kindling sticks on the top of the oven, and keep feeding them on until you get a high heat and it will give the right amount of heat to produce the delicious crackling we all know and love...
G'day mate, Wow, wicked feedback and tips how you have cooked your roast pork. I will surely give some of those a try out for sure. Thanks heaps for your reply mate. Cheers Tim.
Gday Tim Hope you are well. Just going thru some of your older cookups and I love his idea of a camp fire sand area you have got for your oven cooking. I am building a new bbq area and I think I'll do something similar but I'm a bit pushed for space. I could probably do a smaller version. Love all your videos and hopefully you get some time to do more. Thanks mate.
Gday mate, That sand pit was in my back yard when I moved in. It’s very handy for camp oven cook ups, rather than digging a hole in your lawn. Lol. Thanks a lot mate for your feedback. I’m planning a few camp oven cooking videos. Cheers Tim
G'day mate, Yeah the gravy in the billy idea came from a tip from one of my earlier camp oven cook up videos. Works a treat mate. Thanks for your feedback mate. Cheers Tim.
Looks amazing, a bit wary about heating food in the tin tho. The cans have a coating inside to preserve the shelf life of the food. Apparel it’s toxic if heated into the food. 😮
Looks beautiful mate is that what I was smelling over the country side lol. I've always put the whole tin of veggies in the Billy with the gravey work's a treat
Nice one Timbo! I did exactly the same cut, the exact same way camping last weekend. Beautiful mate, and everyone loved it, so you know it was good. Other than a leg of lamb done the same way in the bush - is there much better in the best country on earth? Cheers mate.
G'day Murray, Yeah both of those cuts go really well in the camp oven. I will be getting on another roast pork in the camp oven, turned out a treat. Not much better at all mate, just the best. Thanks for your reply mate. Cheers Tim.
G'day Todd, Yeah mate. I have a trivet in the bottom of my camp oven. They are great for keeping what ever it is you're cooking up off the bottom, so it doesn't burn. Thanks a lot for your reply and feedback mate. Cheers Tim.
Have you tried, stuff the roast with can peaches and garlic. Place some in the bottom. need the tin foil trick. Then, when cooked, remove roast, add red wine and reduce the liquid and break up the peaches. Now thats your gravy. Crackle will become second best.
mmmm...5 food groups, pork, pork crackling, pork & veg, pork & gravy and ummmmmm bacon. Wrote a poem 'bout you & camping in Timbuktu... Tim & I camping went, found three girls in a two man tent, had no idea of what to do, so I bucked one & Timbuktu.😆
Hey Tim hope all is well mate! Pork looked fantastic. Just a quick question mate! I went to show my wife your yummy pork last night after work. Now I think I commented earlier on this video however I may have forgot to hit the send button. Or maybe I did comment and unfortunately you may have thought my comment warranted a delete as my choice of wording may not of been the best choice . If so I do apologies Mate as I didn’t mean any disrespect to you or your channel. I really enjoy your watching your channel as you always give sone wonderful tips regarding the high country and I learn a lot. Cheers Tim, hope all is well and great stuff as always . 😀
G'day mate, I don't recall any reply from you on this video. I haven't deleted any past comments that you have posted. I hope the video went down well mate. Lol Cheers Tim.
Nice cook up young felah, but l got one on you with me wood oven installed in my garage l cooked up a lamb roast with spuds and pumpkin on Sunday, only made one mistake no gravey just mint sauce. Next Sunday l looking at roast chicken,l might try making me own stuffing and gravey. Its not a easy life being a senior cooking,4wheeling,camping, and watching everyone working.😁😊
Greg Palmer Gday Greg, The good ol wood oven in your shed sounds great mate. Specially if you can cook on it. I hope the roast chicken goes well on it. Gravy goes well on any roast. Thanks for your reply mate. Cheers Tim.
Just Bought my first camp oven, super keen for future roasts. But I got told to “burn it in” before I use it, is this right or should she be right from the get go ???? Cheers
G'day Sam , I have two videos on my channel that you might like to watch if you haven't already. One is about cooking in a camp oven. Simple tips for first timers. The other video is about how to season a new cast iron camp oven. Hope that helps mate, and you enjoy the meals that you make in your new camp oven. Cheers Tim.
Hey, I just wanted to know if u reckon a stock 2020 Toyota sr5 hilux can do the Victorian High country tracks in Dargo, the hilux only has mud terrain tyres and I was wondering of your opinion
G'day mate, It's not just about if your vehicle can do the High Country. Whats your off road driving experience? The end of the day, your 4WD is only going to perform on how well you pick lines on tracks. I have a video on the topic on my channel. Cheers Tim.
G'Day Batesy! Love it, that's such a brilliant roast pork, I can't even cook that well in the oven in the kitchen at home!! Silly question though, and I apologise in advance if you have covered this. You cook with a cast iron camp oven. Is there any difference to using a spun steel camp oven? Not sure if there would be heat differences etc. I'd imagine a spun steel oven would heat up and cool quicker than cast steel which I reckon would be more gentle and consistent. If you have any hints or tips for those of us with spun steel I'd love to hear! Cheers!
Br H Gday mate, It’s certainly a bit more fiddly cooking in the camp oven , than the home kitchen oven. But, once you get the camp oven sorted out, it’s just the best way of cooking. No question is a silly one mate. I’ve not used a spun steel camp oven. I’d be keen some day to try one out, and see what cooking times might happen compared to the cast iron camp oven. Thanks heaps for your reply and feedback mate. Cheers Tim.
Hi Mr H .... it's mainly horses for courses .... cast iron is heavy ..... spun steel is light ... They will heat up and retain heat at different rates but at the end of the day its camp cooking .... It's all about you and how you approach the cooking. I actually use a huge cast aluminium alloy camp oven when we have large family camping trips .... Pretty sure it would be around around 20L in size ...It was gifted to me by my father in law who was an ex Head Stockman from Western Queensland.
Doing my first roast tonight in my Dutch oven. Happened upon this while searching for cook times. You should try inserting garlic into the roast. My grandmother's ole trick. And serve with a good applesauce for dipping. Yeah mate, I'm American.
Gday Chris, I hope your camp oven roast goes well tonight. I’d be keen to hear how it goes. I do put garlic pieces into my roast lamb. I’ve a video on a roast lamb and the garlic. Tastes amazing. Thanks for your reply mate. Cheers Tim.
Roast looks great! I've wondered how to do that in a Dutch over. However, I cringed when you put that can of veggies directly in the coals because canned goods tend to have plastic liners, and that liner melted and left you with veggies marinated in melted plastic and plastic chemicals. :)
My mate got horrible food poisoning from putting a can directly in the coles. It melts the plastic lining off the inside of the can & mixes with food good luck
