It is the Schiacciata alla Messinese with lots of Escarole, Anchovies, tomatoes and Caciocavallo inside… enclosed in 2 layers of CRISPY dough, the result you will see on video is IRRESISTIBLE! Plus it's in XXL FORMAT so for the whole family! Cheap and Satiating as well as satisfying!
⚠️ Rest times seem like a lot, but being a fairly soft dough it needs short but close times of growth and folds to make it gain more and more strength and body! 👇👇👇
2:10 1st Rising 30-40 minutes (with relative folds)
2:55 2nd Rising 30-40 minutes (with relative folds)
2:39 3rd Rising for about 2 hours or until doubled in volume
5:04 4th Rising 30-40 minutes (after making the loaves)
10:20 5th Rising after giving it the shape
10:40 🌡️ COOKING We bake for about 25 minutes in the oven already at temperature
240° Static 230° Ventilated
