Cucumber Chaat Rolls
Servings - 3
INGREDIENTS
Oil - 1 tablespoon
Turmeric - 1/8 teaspoon
Puffed rice - 40 grams
Black salt - 1/8 teaspoon
Boondi - 7 grams
Sev - 10 grams
Coriander - 5 grams
Garlic - 1 tablespoon
Green chili - 1
Cumin seeds - 1/2 teaspoon
Black salt - 1/2 teaspoon
Lemon juice - 2 teaspoons
Water - 50 milliliters
Yogurt - 60 grams
Boiled white chickpeas - 330 grams
Onions - 60 grams
Tomato - 60 grams
Green chili - 1 teaspoon
Coriander - 1 tablespoon
Cumin powder - 1/2 teaspoon
Black salt - 1/4 teaspoon
Salt - 1/4 teaspoon
Chaat masala - 1/2 teaspoon
Lemon juice - 1 tablespoon
Cucumber - 350 grams
Sev - for garnishing
Coriander - for garnishing
PREPARATION
1. Heat 1 tablespoon oil in a pan, add 1/8 teaspoon turmeric and stir well.
2. Add 40 grams puffed rice and roast for 2 minutes.
3. Add 1/8 teaspoon black salt, 7 grams boondi, 10 grams sev and cook for 1 minute. Remove it from heat.
4. In a blender, add 5 grams coriander, 1 tablespoon garlic, 1 green chili, 1/2 teaspoon cumin seeds, 1/2 teaspoon black salt, 2 teaspoons lemon juice, 50 milliliters water and blend it well.
5. In a bowl, add 60 grams yogurt, blended mixture and mix it well.
6. In a bowl, add 330 grams boiled white chickpeas and mash them with the help of food masher.
7. Add 60 grams onions, 60 grams tomato, 1 teaspoon green chili, 1 tablespoon coriander, 1/2 teaspoon cumin seeds, 1/4 teaspoon black salt, 1/4 teaspoon salt, 1/2 teaspoon chaat masala, puffed rice mixture, 1 tablespoon lemon juice and mix it well.
8. On a board place 350 grams cucumber and cut it into long strips.
9. On a board, place cling warp and place long strips on it.
10. Add prepared green chutney on it and spread it evenly.
11. Add prepared mixture on it and spread it evenly.
12. Now, roll it with the help of your fingers and refrigerate for 10 minutes.
13. Remove cling warp and cut it into pieces.
14. Garnish with sev and coriander.
15. Serve.
