bharath kumar ramsay's cooking style is italian. That chef is a thai who cooks thai food. Gordon can cook more variety of dishes than him. He may be better in the thai dishes but that doesnt make him a better chef than Ramsay
Here's what I learned from reading David Thompson's book. Western food is based on portraying the flavor of the main ingredient, typically by cutting down the amount of ingredients or avoiding any overpowering flavoring. Thai food on the other hand uses a lot of very intense ingredients to achieve a delicate balance of flavors that define what that dish is supposed to taste like. The chef uses the words "sweet, sour and salty", so the balance of the flavoring agents (tamarind, fish sauce, sugar) is off, which means it's not pad thai. A western cook might think it's pad thai because the main ingredients (noodles, shrimp, bean sprouts etc) are there, but that's not what defines the dish.

Assuming that OP's comments are accurate, it's probably just a reflection of the degree of importance that each culture places on ingredients vs flavour. Eg: you can change the noodles, the type of sugar, and use different pastes, it will be Pad Thai so long as you achieve a similar balance of flavour and texture. On the other hand, traditional Western approach to cooking are more strict about the ingredients -- they'd care about whether there's egg or peanuts, or the type of noodles used.

Joke aside but i think Gordon has been yelled at a lot by other top chefs during his career. The fact that he still goes out of his comfort zone and wants to learn new things is what makes him a great chef for me.

Gordon stands up, picks up the apron, and marches onto the line. With one confident wink and a stern glance, he says four words that return hope to the game: **where's the lamb sauce **
To be fair, cooking is an art that covers a myraid of recipes from every part of the world. Even someone who has mastered their craft, like Gordon, still don't know everything about cooking. The fact that Gordon was humble about it shows that he understands the old adage: "the more you know, the more you learn how much you don't know."
I think the sugar was the kicker. I've made it a few times with white sugar like he did and it just doesn't taste right. Palm sugar is best and brown sugar works okay. Plus you need a metric ass load of lime compared to how it is served in the west, otherwise it doesn't taste like what you get in Thailand.

My girlfriend is thai and I'm a pro cook so I know how to make it pretty good and legit. Basically, if you dont have access to fresh tamarind to grind into paste, you can go to a asian market and buy tamarind paste. You start by boiling water and the tamarind paste about an equal ratio until it becomes a thick sauce. You than strain it, because the tamarind has a stringy pulp you dont want. Once you have your sauce (I typically use 2 cups of water and paste), you cook the sauce again. Adding soy sauce (1-3tsp about), about a quarter cup of coconut/palm sugar (crucial for the flavor), and than you can add your fish sauce (I'm vegan So I dont use it). Put all these ingredients to taste to your preference. One big secret is to toss your noodles in black soy sauce. Its awesome, because it firmly layers some really sweet and salty flavor into the noodle. From here, I simply sautee a little garlic and chili. Once sauteed I add my protein (typically tofu or seitan for me), cook, add your noodles, add your sauce. Boom. From here you serve it with chinese chive, peanut, dry chili, and mung bean sprouts on the side. Everytime I make this sauce, I'm able to make fresh pad thai, about 6 different orders worth. Infact I have noodles, pad thai sauce in my fridge now!
Fun fact: Gordon was used to much harsher criticism when he was under Marco Pierre White. Look up "Marco Pierre White and apprentice Gordon Ramsay" and hear the story about how he made Gordon cry. This amazing Thai chef was actually very polite with Gordon.

When you have Asian dishes that add stuff like fish sauce or shrimp paste it's REALLY hard to get it right. It's going to ether taste bad or not authentic.

To be fair Gordon at the start of this video did say "this is my take on a classic". Which means you usually cook the original and then alter it for your "take".
Look at his face he definitely didn't like it. If he liked it he probably would have said that after tasting and said that it isn't really pad Thai afterwards. But he was uncomfortable saying Gordon what he is thinking

It’s not Pad Thai, he has a very valid point. It probably tasted great, that doesn’t matter, you can’t call something Pad Thai if you don’t make Pad Thai.
As a Thai myself, I can understand why the Thai chef said that. Thai flavour is basically sweetness, sourness, and saltiness cranked up to 11. I'm one of the few Thais who don't enjoy Thai food very much because the flavours can be too extreme and not good for your health. I'm sure I would've loved Gordon's version of the Pad Thai.
Most of asian food is like that. Covering great (or sometimes not so great) ingredients with sauces and seasoning that mask the beautiful pure flavors of nature. When the joy of food should be in the ingredients and letting them talk for themselves. Sauces and seasoning should accentuate, not mask. Japanese cuisine is the only asian cuisine that respects the ingredients.
I'm not surprised at all, that's what Ramsey, "cooks at home." Which means it has been westernized. I'm pretty sure that Pad Thai is great for most westerners, but not Thailanders.
I've been to about a dozen Thai restaurants in the US and had their Pad Thai, and the taste has been pretty consistent between all of them and I'm sure most of them were made by Thai people. I don't know how authentic they've been, but what Ramsay made looks pretty different than what I've been eating.

Yeah, Ramsay has a tendency to change dishes too much from the traditional version in order to put his own twist on it. So it was probably really tasty, but no longer pad thai.

Love how he doesn't argue or get defensive. I’m Thai. I wish I could break down the details for you as well. But since I have never cooked Pad Thai by myself, I cannot. Although I can say that from the looks of it, it gives me strange feelings. It doesn’t look like the Pad Thai that I used to always eat.
Salty part of pad thai mostly comes from that small penny size shrimp, gordon used tamarind paste while most street vendor use watered down tamarind paste to cook the noodle until soft that caused the noodle to absorb the sauce. Don't even get me started on the amount of sugar this isn't a dessert and the finished product looks dried and to top it off loads of peanuts. Don't get me wrong it might be delicious but if I ordered a Pad Thai I expect to get Pad Thai not just some random delicious stir fried. If you ordered a coke you expect to get the coke not pepsi ITS NOT THE SAME!!
My recipe as thai chef at lotus: Boil soaked noodle 25 seconds. Drain. Throw noodle in hot oiled wok.with garlic. Toss to brown/make chewy/ evaporate water. (Add "parboiled shrimp" if using shrimp) Add sauce(tamarind/fish sauce/ vinager/coconut sugar) toss/thicken 30 secs. add preserved cabbage/ already "velveted" meat. Add green onion/peanuts/ beansprout. Toss. Plate. Garnish with lime/sprout pile Full jet engine heat whole time. Cook time 2 minute. He did all wrong and not quicker nobody uses salt in Asian food, use Fermented salty sauces/foods instead for flavor (soy/fish/chili/broadbean/Oyster etc)
What surprised me is that he was watching Gordon making that dish right from the beginning and was laughing around and “happppppy” and all that...once he puts that thing in his mouth, his face changed as if he shit his pants lol
He's actually makes quiet a few dishes from other cultures that people from said cultures wouldn't agree with. Not saying it's not good but hard to say it's actually that dish
It’s really hard to get used to the sweet and sour palate of Thai if you never eat them long enough. Gordon probably tried to adjust with the western/Italian sour style instead of Thai’s. Thai’s are more distinct

It's funny like this, but when you watch the whole clip Gordon remarks about how unskilled he is in Thai cuisine and looks forward to learning from the other chef. Maybe it was just worse than the guy thought it would be.
He pretends to be more knowledgeable about foreign food than he is. His "paella" from another video was a complete joke and a misrepresentation of Spanish cuisine. And keep in mind that, despite being from Spain, I'm pretty lax to what can be considered a paella. His pasta tutorial is even worse, I was amazed at the rookie mistakes that he made. I guess he knows British food, and other cuisines, but he's just terrible with some others. The dude is terribly good at keeping people entertained and playing his persona though, and that's what matters in British and American TV.
