Thanks I harvested 4 wild hogs in FL and filled my freezers. This will be a great way to make some room for more game this fall.

You can use a pillow case instead of a sock. Easier to find.

So very excited to see this. I have my Pappys cure recipe. He used Brer Rabbit Blackstrap Molasses instead of sugar. His recipe came about during the depression because sugar was very difficult to get. You gave me "the rest of the story". I didn't know how to cure a ham/bacon. He passed away long before I was interested enough to learn the old ways. Now I can use his cure and your methodology. Thank you. 😊

I name my pigs after food. Right now, we're raising sausage patty. My son named her. He said the sausage is silent, rofl

We would name our pigs things like Pork Chop, Bacon and Baby Back. The grandparents thought it would help us understand why we were raising them. It worked.

I realize most people these days basically do the same process, BUT back in the day, my grandparents dropped their meat in a salt box and when they hung in to smoke, they didn't use the paper and ham socks while it was hanging.

Tim we moved to the country to become more self sufficient. My wife has Lupus so it's really important to know where our food comes from. Because of one of your videos I built my own cold smokehouse last summer. I got to use it over the deer season and I can still smell the hickory when I even get close!! I'm looking forward to making my own hams and bacon as well as hanging other meats!! Thank You!!
